  1. Some of these look amazing! I want to try the mini chicken pot pies. Like yesterday. Working mom of 6 here. I have a couple of not-quite-enough leftovers solutions. The day after spaghetti, I mix in pepperoni, mozzarella, and some red pepper flakes. Top with more mozz and bake. The day after tacos, I make cornbread, spread the leftover taco meat and some cheddar and bake for taco pie. That’s one of my husband’s favorites. If I have part of a pot of beans left but not enough to feed everyone, I brown some ground beef, add some water, bouillon, and whatever seasonings sound good and make beef and bean soup.

  3. I love things I can reinvent from leftovers. I make extra taco meat and a little more water, then use it a few nights later for taco spaghetti (boil noodles, drain add taco meat, cheese, sour cream and anythong else you want and toss). Slow cooker lasagna is another. Just make extra spaghetti sauce with meat and store in the fridge. Layer in sloe cooker starting with sauce then noodles (uncooked) then sauce, cheese then sauce again until youhave about 1-1 1/2 cups left of sauce. Add some water to thin the sauce. Have top layer finish with noodle, pour thinned sauce over the top of eeverythingg, top with cheese and cook for 2-3 hours on high for 2 – 2 1/2 hours or low for 4-5 hours. Time will vary per crock pot
