Can’t decide between Mexican and Italian? No worries. This recipe covers both in one delicious and easy-to-make dish. Pizza quesadillas are made just like a classic quesadilla with a crispy tortilla shell only they are stuffed with pizza sauce, pepperonis, and melted mozzarella cheese.

Get ready to see your kids light up. After I made these for the first time, my kids were grinning ear to ear. They loved them so much, I’m not sure they’ll let me make a regular quesadilla ever again.

  • TORTILLAS: If you want a sneaky way to make these quesadillas a bit healthier, you can swap out the flour tortillas for whole wheat. The kids will never know the difference!
  • DIPPING SAUCE: You can use any extra pizza sauce to dip the quesadillas in. We also love to dip our pizza quesadillas in ranch, just like we do with our normal pizza.

How to Make Pizza Quesadillas

Pizza Quesadillas will come together super quickly and easily in just 15 minutes. You can use an electric griddle or a skillet on the stovetop to make your perfectly crisp tortillas!

  1. Place one tortilla on a heated griddle or skillet. Top with shredded cheese.

    Pro-Tip: It might seem like you’re adding too much cheese, but the second layer is necessary for keeping the quesadilla together when flipping and slicing.

  7. Use a pizza slicer to cut and serve.

  • To Store: Wrap any leftover pizza quesadillas tightly in plastic and place in an airtight container for up to 3 days.
  • To Freeze: You can freeze your quesadillas for a quick and easy snack or lunch. Wrap tightly in plastic, then foil. Place in a freezer Ziploc bag for up to 2 months. Let thaw before reheating.
  • To Reheat: For a crispier quesadilla, I recommend reheating on your griddle or skillet. However, if you’re in a hurry you can pop it in the microwave to reheat as well.

Ingredients
  

  • 12 flour tortillas fajita size
  • 3 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 3 cups pizza sauce divided
  • Optional parsley for serving

Instructions
 

  • Preheat a skillet or griddle to medium high heat.
  • Spray the surface with cooking spray and place one tortilla on the heated surface.
  • Top the tortilla with ¼ cup of the shredded cheese and allow to melt.
  • Once the cheese is melted, top with sliced pepperoni and ¼ cup of sauce.
  • Sprinkle another layer of cheese, top with a second tortilla and flip once the bottom layer is crispy and golden.
  • Cook the opposite side until golden brown.
  • Use a pizza slicer or knife to slice and serve. Serve with remaining marinara for dipping.
