Easy no bake desserts are what I reach for when it is too hot to turn on the oven or I just want something cool and creamy without the work. These are the layered, fluffy, fudgy, frozen treats that come together with a mixing bowl and a fridge. Think dessert lasagna, icebox cakes, dips you eat with a cookie, and pies you never have to bake.

I make these year round, but they earn their keep in summer and any time I am feeding a crowd. Most of them are make ahead, which is the real reason I love them. I can build the whole thing the night before, stick it in the fridge, and have one less thing to do when people show up.

A Few Things That Make No-Bake Desserts Work
Give them time to set. The fridge or freezer is doing the work an oven would. Most of these need a few hours, and many are better overnight. If you cut into a layered dessert too early, the layers slide. Build it ahead and let it firm up fully.
Soften cream cheese first. Cold cream cheese never fully smooths out and you end up with little lumps in the filling. Leave it on the counter until it is soft before you mix.
Cold bowl and beaters for whipped cream. If you are whipping your own cream instead of using whipped topping, chill the bowl and beaters first. It whips faster and holds longer.
FAQ
A dessert dip or a dirt cup. Both come together in minutes with no setting time and no layering, so they are hard to mess up.
Yes, and most of them are better made ahead. The layered desserts, icebox cakes, and puddings all want time in the fridge, so building them the day before actually helps.
Most do. Anything with pudding, whipped topping, or cream cheese should stay refrigerated until you serve it and go back in the fridge after. Fudge and truffles are the most forgiving on a dessert table.
