Substitutions and Additions

  • Make With Margarine: You can substitute margarine for the butter if you wish. Just remember that margarine has a higher water content than butter. You may need to adjust your stovetop cooking time.
  • Prepare Without Peanut Butter: If you cannot find the Ritz bits peanut butter, or if you have a nut allergy, you can substitute plain Ritz minis. Prepare the recipe as instructed below.

How to Make Ritz Churro Bites

  1. Make The Butter Mixture: Bring the butter, light brown sugar, vanilla extract, and cinnamon to a low boil, stirring frequently.
  2. Coat The Crackers: Spoon the butter mixture over the Ritz bits crackers and “toss” until well coated.
  3. Bake: Bake at 350 degrees Fahrenheit for 10 minutes. 
  4. Sprinkle With Cinnamon and Sugar: Sprinkle the cinnamon and sugar over the crackers and cool completely. Once cooled, “break” the churro bites apart.
  5. Serve: Serve and enjoy!

  • If you don’t want to make your own cinnamon sugar mixture, you can buy a bottle of cinnamon sugar at your local grocery store.
  • If you choose to make your churros with margarine, ½ cup of margarine is equivalent to about one stick of butter.

Ingredients
  

  • 8.8 ounces box peanut butter Ritz bits cracker sandwiches
  • ½ cup salted sweet cream butter
  • cup + 2 tablespoons light brown sugar packed
  • ¾ teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • 3 tablespoons granulated sugar
  • ¾ teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350°F. Line a baking sheet with 2 layers of heavy-duty aluminum foil.
  • Spread the Ritz bits crackers in a single layer on the prepared baking sheet. Set it aside.
  • Add the butter, light brown sugar, vanilla extract, and ½ teaspoon cinnamon to a 2 to 3-quart heavy-bottomed saucepan over medium-high heat. Bring to a low boil for 1-1½ minutes. Be sure to stir frequently.
  • Remove the saucepan from the heat. Carefully spoon the butter mixture over the layer of Ritz bits crackers. Use tongs or a silicone spatula to “toss” the crackers until well coated. Bake for 10 minutes.
  • Add the granulated sugar and ground cinnamon to a small mixing bowl. Stir to combine. Set it aside.
  • Remove the cracker from the oven. Sprinkle the cinnamon and sugar over the crackers. Allow to cool completely. Once cooled, “break” the churro bites apart. Serve once completely cooled.
