While Ritz Bits S’mores has been discontinued, and other cracker sandwiches are sold with a cheese or peanut butter stuffing, this original recipe is a different way to dress up a Ritz to make it seem more like a sweet treat.

It couldn’t be any easier to smear some marshmallow creme in between two buttery crackers, then dip the entire sandwich in chocolate to create the best s’more cookie sandwich. (It tastes even better than Ritz cheese crackers and Ritz peanut butter crackers too!)

  1. Melt The Chocolate: Melt the chocolate in 40-second intervals, until completely melted.
  2. Stuff The Sandwiches: Add a dollop of marshmallow crème to the center of half the crackers and then press another cracker on top.
  3. Dip and Decorate: Dip each cracker sandwich into melted chocolate, place on wax paper, and garnish with graham cracker crumbles, mini marshmallows, and mini chocolate chips.
  4. Serve: Allow the chocolate to harden and serve. Enjoy!

  • For this recipe, I highly recommend purchasing Ritz Crackers. They do not break as quickly as the other brands.
  • Make sure not to add too much marshmallow crème on the crackers. The crème will spread, and you want to keep them in the center of the cracker to avoid mixing the crème into the melted chocolate almond bark.
  • When melting almond bark make sure you go in 30-40 second intervals. You want to make sure you get all the almond bark melted evenly to avoid clumping.
  • I recommend placing the chocolate-covered cracker sandwiches on wax paper. It really allows the cracker sandwich to easily pop off after chocolate has hardened.

Line the crackers on a baking sheet and bake them in the oven at 350 degrees just until the marshmallows start to melt, about 2 minutes.

Can I add peanut butter or another nut butter to my cookie sandwiches?

  • 7 oz Marshmallow Crème
  • 24 oz Chocolate Almond Bark
  • 1 cup Graham Crackers crushed
  • Marshmallow Bits (optional)
  • Mini Chocolate Chips (optional)

Instructions
 

  • In a microwave-safe bowl, melt chocolate almond bark, in 40-second intervals, until completely melted.
  • Place Ritz’s crackers on a long sheet of wax paper.
  • Add a small dollop of marshmallow crème to the center of half the crackers.
  • Place another cracker on top of the marshmallow crème. Press crackers together, ensuring the marshmallow crème has been distributed evenly.
  • Use tongs to grab a cracker sandwich and dip it into melted chocolate.
