Perfect PSL Jello Shots

These Pumpkin Spice Latte Jello Shots are the perfect way to spice up any party with the same delicious taste as a PSL from Starbucks, but made better because it has booze!

What makes my jello shots so special and sets them apart from the competition is that these are infused with real coffee so you get a caffeine kick with a boozy bite in every fall-flavored coffee cocktail.

Not all pumpkin spice jello shots recipes start with cold brew coffee but trust me when I tell you that it’s a necessary ingredient.

The liquid latte mixture is so easy to make by mixing gelatin with alcohol, coffee, syrup, and creamer; it’s filled with the same pumpkin pie spice flavors you’ll find at your local Starbucks, but simply prepared at home as the cutest spiked coffee concoction made in mini finger food form.

Why We Love This Pumpkin Spice Latte Jello Shot Recipe

  • Quick and easy to make in 5 minutes.
  • Only uses a handful of ingredients.
  • Simply skip the alcohol to serve kid-friendly pumpkin spice shots.
  • Coffee jello shots contain caffeine AND alcohol!
  • Fun way to get your pumpkin spice fix in the form of a jello shot.
  • Tastes like a homemade PSL without waiting on long lines or incurring the cost.
  • Perfect to prepare for girls’ night, fall gatherings, or Friendsgiving and Thanksgiving parties.

Other Easy Pumpkin Spice Recipes

Ingredients

  • Water
  • Unflavored gelatin
  • Cold brew coffee: I prefer to use unflavored and unsweetened coffee with a medium to bold brew.
  • Whipped cream flavored vodka
  • French vanilla flavored coffee creamer
  • Pumpkin pie spice flavor syrup: I used Torani brand but you can use any brand you prefer.
  • Extra Creamy Squirt whipped topping
  • Pumpkin pie spice blend
  • Green straws

Substitutions and Additions

  • Vary The Vodka: You can substitute the whipped cream flavored vodka with vanilla or unflavored vodka if you are unable to find the whipped cream flavored at your local liquor store. I will note that the vanilla or unflavored vodka adds a slightly stronger vodka flavor profile to your Jell-O shots. The whipped cream-flavored vodka is sweeter and lends a more mild alcohol flavor to your pumpkin spice latte Jell-O shots.
  • Change The Coffee Creamer: I used a french vanilla flavored coffee creamer in this recipe but standard vanilla or a caramel flavored coffee creamer will work great too. If you can find a pumpkin pie spice flavored coffee creamer during the holiday season, you can use that and omit the pumpkin spice flavored coffee syrup.
  • Garnish Your Shot Glasses: Add a squirt of whipped topping, a sprinkle of pumpkin pie spice blend, and a small green straw to each pumpkin spice latte shot to give it a look that’ll top a Starbucks drink any day.

Pro Tip: You may need to stir the hot gelatin to make sure you have no lumps remaining.
  2. Make The Mixture: Stir together the cold brew coffee, vodka, coffee creamer, and pumpkin spice flavor syrup. Add the gelatin and stir well.
  3. Pour: Pour the liquid mixture into each shot cup and chill in the refrigerator for a minimum of 8 hours or up to overnight.

Tip From Our Recipe Developer

  • You can double or triple this recipe depending on the size of your crowd.
  • You can make these jello shots without alcohol by omitting the vodka and replacing it with water.
  • I like to line up my shot glasses on a flat, firm, moveable surface like a tray or cookie sheet. This makes it easier to move them back and forth from the fridge.
  • If you cannot find the 2-ounce plastic shot cups (linked here), they may be labeled as condiment cups. These can be used interchangeably. You can use any shot cups you prefer but keep in mind that your servings may be different from this recipe.
  • Do not garnish your jello shots unless you’re serving them right away.

Storage

  • To Store: Store your jello shots covered in the refrigerator for 2-3 days. Leave off the garnish until just before serving.

Frequently Asked Questions

Can I make Jell-O Shots in advance?

These Pumpkin spice latte Jell-O shots are best served cold. You can make them ahead of time and keep them covered with plastic wrap in the fridge, for up to 2-3 days. Garnish just before serving them.

Where can I find the Pumpkin Spice Flavor Syrup For This Recipe?

The pumpkin spice flavor syrup can be found where you buy other coffee flavor syrups or online. This is the same way that your favorite coffee shops typically flavor your hot lattes for pumpkin spice or other flavored lattes.
If it is not in your grocery stores or big box retailers, then it can easily be purchased on Amazon or other online retailers year-round (linked here). It may be a seasonal item sold in your area. I like to buy the larger-sized bottles and use it to flavor my morning brewed coffee during the fall season.

What Brand Of Coffee Should I use For This Recipe??

Your favorite brand of cold brew coffee will work for this recipe as long as it is unflavored and unsweetened. I love to keep the cold brewed coffee in my refrigerator at all times for iced coffees.
If you do not want to buy the cold brew from the refrigerated section of your grocery store, then you can just brew a large pot of coffee and reserve 1 cup.
You will need to allow it to cool completely before using. Make sure your brewed coffee is unflavored as well. I like a medium or bold variety for this recipe.

Can I make my Own Pumpkin Pie Spice?

Yes, you can easily make your own pumpkin pie spice. It is a simple mixture of cinnamon, nutmeg, and ginger.

Is Cold Brew Coffee And Cold Coffee The Same?

Cold brew coffee and cold coffee are not exactly the same. Cold brew has a smoother texture than classic cold coffee and is brewed a bit differently. You can use cold coffee in this recipe, but you may notice that the flavor is different than the classic cold brew.

Pumpkin Spice Latte Jell-O Shots are easy to prepare in 5 minutes and make the prettiest little lattes with a big boozy bite! Full of fall flavors, it's always fun to consume your coffee in the form of a cocktail.
Prep Time 2 mins
Chill Time 8 hrs
Total Time 8 hrs 2 mins

Ingredients

  • ¼ cup water
  • 2 0.25 ounce packets unflavored gelatin
  • 1 cup cold brew coffee unflavored and unsweetened, medium/bold brew
  • ¼ cup whipped cream flavored vodka
  • ¼ cup french vanilla flavored coffee creamer
  • 2 tablespoons pumpkin pie spice flavor syrup (I used Torani brand)
  • Garnish – Extra Creamy Squirt whipped topping, dry pumpkin pie spice blend & 3 green straws cut into small pieces

Instructions

  • Place 9 jell-o shot cups (they must be at least 2 oz. in size) onto a rimmed tray, or plate, and set aside.
  • In a small bowl add the water then sprinkle the packets of unflavored gelatin over the top surface of the water. Swirl the bowl to allow the gelatin to be absorbed by the water. Microwave on high for 20-30 seconds or until the gelatin has dissolved. You may need to stir the hot gelatin to make sure you have no lumps remaining. Set aside to cool slightly while assembling the remaining ingredients.
  • In a 2 cup sized spouted measuring cup add the cold brew coffee, whipped cream flavored vodka, french vanilla coffee creamer and pumpkin spice flavor syrup. Stir to combine.
  • Add the warm, and dissolved, unflavored gelatin to the coffee mixture and stir well.
  • Slowly pour approximately 1 ½ ounces of the pumpkin spice latte mixture into each of the jell-o shot cups. You may want to add just a touch more than the 1 ½ ounces to each cup to make a nice full cup.
  • Place the tray of pumpkin spice latte jell-o shots into the refrigerator for a minimum of 8 hours or up to overnight to allow the gelatin to fully set up.
  • Once the pumpkin spice latte jell-o shots have set up you can garnish each one with a squirt of the whipped topping, a light sprinkle of pumpkin pie spice and a piece of green straw. You will want to wait until you are ready to serve your jell-o shots before garnishing them.
