Not all pumpkin spice jello shots recipes start with cold brew coffee but trust me when I tell you that it’s a necessary ingredient.

The liquid latte mixture is so easy to make by mixing gelatin with alcohol, coffee, syrup, and creamer; it’s filled with the same pumpkin pie spice flavors you’ll find at your local Starbucks, but simply prepared at home as the cutest spiked coffee concoction made in mini finger food form.

  • Change The Coffee Creamer: I used a french vanilla flavored coffee creamer in this recipe but standard vanilla or a caramel flavored coffee creamer will work great too. If you can find a pumpkin pie spice flavored coffee creamer during the holiday season, you can use that and omit the pumpkin spice flavored coffee syrup.

How to Make Pumpkin Spice Latte Jello Shots

  1. Prepare The Gelatin Powder: Sprinkle the packets of gelatin over the water and swirl the bowl until absorbed. Microwave for 20-30 seconds or until the gelatin has dissolved.
    Pro Tip: You may need to stir the hot gelatin to make sure you have no lumps remaining.
  2. Make The Mixture: Stir together the cold brew coffee, vodka, coffee creamer, and pumpkin spice flavor syrup. Add the gelatin and stir well.
  3. Pour: Pour the liquid mixture into each shot cup and chill in the refrigerator for a minimum of 8 hours or up to overnight.
  4. Serve: Garnish each shot glass with a squirt of the whipped topping, a light sprinkle of pumpkin pie spice and a piece of green straw just before serving. Enjoy!

Ingredients
  

  • ¼ cup water
  • 2 0.25 ounce packets unflavored gelatin
  • 1 cup cold brew coffee unflavored and unsweetened, medium/bold brew
  • ¼ cup whipped cream flavored vodka
  • ¼ cup french vanilla flavored coffee creamer
  • 2 tablespoons pumpkin pie spice flavor syrup (I used Torani brand)
  • Garnish – Extra Creamy Squirt whipped topping, dry pumpkin pie spice blend & 3 green straws cut into small pieces

Instructions
 

  • Place 9 jell-o shot cups (they must be at least 2 oz. in size) onto a rimmed tray, or plate, and set aside.
  • In a small bowl add the water then sprinkle the packets of unflavored gelatin over the top surface of the water. Swirl the bowl to allow the gelatin to be absorbed by the water. Microwave on high for 20-30 seconds or until the gelatin has dissolved. You may need to stir the hot gelatin to make sure you have no lumps remaining. Set aside to cool slightly while assembling the remaining ingredients.
  • In a 2 cup sized spouted measuring cup add the cold brew coffee, whipped cream flavored vodka, french vanilla coffee creamer and pumpkin spice flavor syrup. Stir to combine.
  • Add the warm, and dissolved, unflavored gelatin to the coffee mixture and stir well.
  • Slowly pour approximately 1 ½ ounces of the pumpkin spice latte mixture into each of the jell-o shot cups. You may want to add just a touch more than the 1 ½ ounces to each cup to make a nice full cup.
  • Place the tray of pumpkin spice latte jell-o shots into the refrigerator for a minimum of 8 hours or up to overnight to allow the gelatin to fully set up.
  • Once the pumpkin spice latte jell-o shots have set up you can garnish each one with a squirt of the whipped topping, a light sprinkle of pumpkin pie spice and a piece of green straw. You will want to wait until you are ready to serve your jell-o shots before garnishing them.
