Pumpkin Spice Latte Jell-O Shots are easy to prepare in 5 minutes and make the prettiest little lattes with a big boozy bite! Full of fall flavors, it's always fun to consume your coffee in the form of a cocktail.
1cupcold brew coffeeunflavored and unsweetened, medium/bold brew
¼cupwhipped cream flavored vodka
¼cupfrench vanilla flavored coffee creamer
2tablespoonspumpkin pie spice flavor syrup (I used Torani brand)
Garnish - Extra Creamy Squirt whipped topping, dry pumpkin pie spice blend & 3 green straws cut into small pieces
Instructions
Place 9 jell-o shot cups (they must be at least 2 oz. in size) onto a rimmed tray, or plate, and set aside.
In a small bowl add the water then sprinkle the packets of unflavored gelatin over the top surface of the water. Swirl the bowl to allow the gelatin to be absorbed by the water. Microwave on high for 20-30 seconds or until the gelatin has dissolved. You may need to stir the hot gelatin to make sure you have no lumps remaining. Set aside to cool slightly while assembling the remaining ingredients.
In a 2 cup sized spouted measuring cup add the cold brew coffee, whipped cream flavored vodka, french vanilla coffee creamer and pumpkin spice flavor syrup. Stir to combine.
Add the warm, and dissolved, unflavored gelatin to the coffee mixture and stir well.
Slowly pour approximately 1 ½ ounces of the pumpkin spice latte mixture into each of the jell-o shot cups. You may want to add just a touch more than the 1 ½ ounces to each cup to make a nice full cup.
Place the tray of pumpkin spice latte jell-o shots into the refrigerator for a minimum of 8 hours or up to overnight to allow the gelatin to fully set up.
Once the pumpkin spice latte jell-o shots have set up you can garnish each one with a squirt of the whipped topping, a light sprinkle of pumpkin pie spice and a piece of green straw. You will want to wait until you are ready to serve your jell-o shots before garnishing them.
Notes
Storage:Store your jello-shots covered in the refrigerator for 2-3 days. Leave off the garnish until just before serving.Tips:
You can double or triple this recipe depending on the size of your crowd.
You can make these jello shots without alcohol by omitting the vodka and replacing it with water.
I like to line up my shot glasses on a flat, firm, moveable surface like a tray or cookie sheet. This makes it easier to move them back and forth from the fridge.
If you cannot find the 2-ounce plastic shot cups with lids (linked here), they may be labeled as condiment cups. These can be used interchangeably. You can use any shot cups you prefer but keep in mind that your servings may be different from this recipe.
Do not garnish your jello shots unless you’re serving them right away.
The pumpkin spice flavor syrup can be found where you buy other coffee flavor syrups or online. This is the same way that your favorite coffee shops typically flavor your hot lattes for pumpkin spice or other flavored lattes. If it is not in your grocery stores, or big box retailers, year round then it can easily be purchased on Amazon or other online retailers. It may be a seasonal item sold in your area. I like to buy the larger sized bottles and use it to flavor my morning brewed coffee during the fall season.
You can substitute the whipped cream flavored vodka with a vanilla, or unflavored vodka, if you are unable to find the whipped cream flavored at your local liquor store. I will note that the vanilla or unflavored vodka adds a slightly stronger vodka flavor profile to your jell-o shots. The whipped cream flavored vodka is sweeter and lends a more mild alcohol flavor to your pumpkin spice latte jell-o shots.
I used a french vanilla flavored coffee creamer to this recipe but a standard vanilla will work just great too. If you can find a pumpkin pie spice flavored coffee creamer during the holiday season then you can use that and omit the pumpkin spice flavored coffee syrup. A caramel flavored coffee creamer would work in this recipe also.
I love to keep the cold brewed coffee in my refrigerator at all times for iced coffees. Your favorite brand will work, you will just want to make sure that it is unflavored and unsweetened. If you do not want to buy the cold brew from your refrigerated section of your grocery store then you can just brew a large pot of coffee and reserve 1 cup. You will need to allow it to cool completely before using. Make sure your brewed coffee is unflavored as well. I like a medium or bold variety for this recipe.
