Chocolate Chip Cookie Brownie Bars are the ultimate treat for anyone with a sweet tooth! They combine two decadent desserts into one delicious dessert bar. With rich, fudgy brownies and chewy chocolate chip cookies all in one bite, these bars will have you coming back for more.

Our Cookie Brownie Bars couldn’t be faster or easier to prepare because when I need a decadent and delicious dessert, there’s no shame in taking a few shortcuts in the kitchen.

Using a box of brownie mix and a store-bought cookie dough not only makes this recipe super simple, but it also leaves you with one bowl to clean and minimal ingredients and measuring.

This chocolate chip cookie brownie recipe begins by pressing a chocolate chip cookie layer into the bottom of a baking pan, covering it with a brownie batter blanket, and sprinkling some more chocolate on top, then it bakes in the oven into a soft and chewy, slightly crunchy brookie.

I like to think of this recipe as the perfect marriage of my Chocolate Chip Cookie Bars (baked from scratch) and my Brookies (chocolate chip cookies mixed with brownies) – it’s the best combination of brownies and cookies baked into a one of a kind double dessert cookies and brownies bar.

Ingredients

  • Box of brownie mix (plus box ingredients)
  • Chocolate chip cookie dough 
  • Mini chocolate chips

Substitutions and Additions

  • Change The Chip: You can mix in some milk and white chocolate chips, add in some dark chocolate chips, semisweet chocolate chips, or peanut butter chips. Who doesn’t love chocolate and peanut butter!?
  • Add Cookies or Candy: Feel free to add your favorite cookies or candy pieces (like Oreos, peanut butter cups, or snickers bars) either on top or baked between the layers, like my Slutty Brownies.
  • Different Dough: You can experiment with peanut butter or sugar cookie dough for a different taste and flavor combination.
  • Tasty Toppings: These cookie brownie bars are delicious as they are, but you can top them with ice cream, whipped topping, or chocolate sauce to make them even more indulgent!

  1. Make The Brownie Batter: Prepare your brownies per the instructions on the box.
  2. Prepare The Pan: Press cookie dough into the bottom of the pan and then pour the brownie batter on top. Sprinkle with mini chocolate chips.
  3. Bake: Bake at 350 degrees Fahrenheit for 50-55 minutes .
    Pro Tip: They will look very crinkly on top, and a toothpick should come out slightly wet. 
  4. Slice and Serve: Cool completely before slicing. Serve and enjoy!

  • If you added a second egg to your brownie batter, you will get a more cake-like brownie, but you might need a few more minutes in the oven!
  • Make sure to let the bars cool completely before removing them from the pan and slicing; they’ll be too soft when warm.

Why is my brownie batter lumpy?

When making the brownie batter, make sure that you are using room temperature butter and not cold butter from the fridge. Cold butter will cause clumping in your batter. 

Can I make this all from scratch?

You can absolutely make your own cookie dough and brownie batter from scratch. This recipe uses premade cookie dough and a box of brownie mix because I wanted to provide a super simple, easy recipe.

You can easily make these bars in advance. Since these cookie brownie bars need to cool and set before you slice them, they are the perfect recipe to make the night before serving. Letting them sit overnight helps ensure they are completely set up for slicing.

Ingredients
  

  • 468 gram (1 roll) cookie dough
  • 400 gram (1 box) of brownie mix
  • ¼ cup mini chocolate chips

Instructions
 

  • Line an 8×8 pan with parchment paper, and grease the sides, and preheat oven to 350F degrees.
  • Press cookie dough into the bottom of the pan to cover the bottom fully.
  • Using a medium bowl prep your brownies per the instructions on the box.
  • Mix brownie batter according to package directions. Note: if you add a second egg you can get a more cake-like brownie (but you might need a few more minutes in the oven)!
  • Pour brownie batter onto prepared cookie dough.
  • Sprinkle ¼ cup mini chocolate chips onto brownie batter.
  • Bake for 50-55 minutes until the brownie is set. Note: They will look very crinkly on top, and a toothpick should come out slightly wet.
  • Set baking dish on a wire rack allow it to cool completely before slicing.
  • Cut and serve with ice cream or on their own!
