Easy No-Bake Ice Cream Sandwich Cake
This recipe is one of my kids all-time favorites! They insist on it for their birthdays every year. It is an added bonus that this cake is more of an assembling project than really cooking!
Some days you just need it easy, right? That is exactly what this cake is – super easy. The hardest part is deciding what type of delicious cookies or candy you are going to top it off with!
Ingredients
- 12 ice cream sandwiches
- 18 Oreos (or similar, crushed and divided)
- 1/2 cup hot fudge
- 1 tub (16 oz.) Cool Whip (thawed and divided) (or try using our Homemade Cool Whip)
- 1 package Jell-O instant chocolate pudding

How to Make Ice Cream Sandwich Cake
- WHISK fudge topping and 2 cups Cool Whip in a medium bowl until blended. Then add dry pudding mix; stir 2 min. Stir in 1 cup of crushed cookies.
- ARRANGE 4 ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; then cover with half the Cool Whip mixture. Repeat 2 more layers. Top with remaining sandwiches. Then, frost with remaining Cool Whip (or as much as you prefer); press remaining cookies into top and sides of dessert. Loosely wrap the cake with foil.
- FREEZE 4 hours.

Variations and Add-On’s
There are so many ways you can change up this cake.
Ice Cream Sandwiches – there are a lot of different flavor ice cream sandwiches out there. Neopolitan is a favorite in my house, we also like the chocolate chip ice cream sandwiches as well.
Pudding flavor – Get creative with your pudding flavor. Banana cream pudding, pistachio, coconut, cheesecake, caramel. Any of these would be delicious!
Add-in’s – Now this is where the fun begins! We used crushed Oreo’s, but we have another version where we used crushed M&M’s (my personal favorite) – check out our M&M Ice Cream Sandwich Cake here! Some other treats that crush up nicely are Heath Bar, Nestle Crunch Bar, Waffle Cones and of course, sprinkles!

Storing and Making Ahead
This can be made 3-4 days ahead of when you need it! Just pull it out of the freezer and let sit for just a few minutes before you are ready to serve it so it is easier to slice.
You can also keep leftovers for about a week or so (good luck with that, mine is always gone immediately)
