I make this apple dump cake with fresh apples when I want all the warm, gooey comfort of apple pie and none of the work that comes with it. Chunks of tender cinnamon apples sit under a golden, buttery cake layer that goes a little crisp on top and stays soft and almost cobbler-like underneath. Add a scoop of vanilla ice cream and a drizzle of caramel and you have one of the easiest fall desserts there is.

This is one of those classic fall desserts that makes my whole house smell incredible while it bakes. The cinnamon and apples and spice cake mix fill the kitchen with that cozy, can-we-eat-it-yet smell, and it pulls everyone in before the timer even goes off. I love that it tastes like I spent the afternoon baking when it really took me about ten minutes to throw together.

Here is what sets my version apart from most dump cakes out there. I use real, fresh Granny Smith apples instead of canned pie filling. That one choice is the whole difference. You get actual chunks of apple with real texture and a tartness that keeps the cake from tasting like sugar on sugar.

This is the first thing I want to bake the second the air starts to cool off. It is easy enough to make on a regular weeknight but feels special enough for company, and it has been on repeat in my kitchen every fall for years. The smell alone is worth making it.

Why I Use Fresh Apples Instead of Canned Pie Filling

Most apple dump cakes start with two cans of apple pie filling. It works, and it is fast, but the apples come out soft and uniform and the whole thing leans very sweet. I wanted real apple flavor and real texture, so I use fresh Granny Smith apples instead.

Granny Smith apples are tart, and that tartness is doing a job. It balances the sweetness of the brown and white sugar and the spice cake mix so the finished cake tastes like apple pie, not like candy. A sweeter apple variety can push the whole thing over the edge into too-sweet, and the apples can turn soft and lose their shape.

If canned is all you have and you need a shortcut, my caramel apple dump cake is built for apple pie filling and comes together even faster. But for that fresh, real-apple bite, this is the one I make.

The Ingredients That Matter

  • Fresh Granny Smith apples: Use them tart and chop them coarsely, not thin. Larger pieces hold their texture as they bake and give you a real bite of apple instead of a soft, formless layer. This is the heart of the recipe, so do not swap in a soft, sweet apple here.
  • Spice cake mix: This is a deliberate pick, not just any boxed mix. The warm spices in spice cake mix layer right on top of the cinnamon and nutmeg in the apples, so you get a deeply spiced cake without measuring out a single extra thing. Yellow cake mix works in a pinch, but you lose that built-in warmth.
  • Melted butter: Melt it, do not slice it cold. Melted butter pours into every dry spot of cake mix and is the single best thing you can do to avoid a powdery top. More on that next.

Here’s Where Most Go Wrong

The number one thing that ruins a dump cake is dry, powdery cake mix on top. It happens when the butter does not reach every bit of the dry mix, and you end up with chalky patches instead of a golden, buttery crust.

Here is how I avoid it every time. I pour the melted butter slowly and as evenly as I can over the entire surface of the cake mix, then I tilt the pan side to side to coax the butter into any spots I missed. The goal is to get butter touching as much of that dry mix as possible.

And do not stir. I know it is tempting, but the layers are the whole point. The butter soaks down through the dry cake mix as it bakes, which is exactly what gives you that golden, slightly crisp top with the tender, gooey apple layer underneath. Stir it and you lose all of that.

How to Make Apple Dump Cake with Fresh Apples

Step 1: Prep the Pan and Oven Preheat the oven to 350 degrees and spray a 9×13 baking dish with cooking spray. The spray matters here so the apples and cake do not stick to the bottom.

Step 3: Add the Apples to the Dish Pour the apple mixture into the prepared baking dish and spread it into an even layer.

How to Serve It

I like to serve this warm, right out of the oven, when the apples are still gooey and the top is at its crispest. A scoop of homemade vanilla ice cream and a drizzle of caramel sauce over a warm bowl is the way to eat it. The contrast of warm cake and cold ice cream is the best part.

Some people like it chilled. If that is you, let it cool fully on the counter, then refrigerate it and serve it cold straight from the fridge.

How to Store Apple Dump Cake

Cover any leftovers and keep them in the refrigerator. Warm apples and dairy should not sit out overnight, so refrigerate it once it has cooled. To serve again, reheat individual portions in the microwave for a few seconds or enjoy it cold.

Why is it called a dump cake?

You basically dump the ingredients into the pan in layers and bake, no mixing required. The name is as literal as it gets, and the easy method is the whole appeal.

Can I use canned apple pie filling instead of fresh apples?

You can, if you are short on time. You lose the fresh-apple texture and tartness that makes this version stand out, but it works. Two cans will cover a 9×13. My caramel apple dump cake is built around pie filling if you want a recipe made for it.

Can I make apple dump cake in a crockpot?

Yes. Layer it the same way in a greased slow cooker, then cook on high for about 2 hours until the top is set and the apples are bubbling. It is a nice hands-off option when the oven is busy.

  • 6 granny smith apples coarsely chopped (about 5 cups)

  • ¾ tsp nutmeg
  • pinch salt
  • 1 package spice cake mix
  • ¾ cup butter melted
  • caramel sauce optional

Instructions
 

  • Preheat oven to 350 degrees. Spray a 9×13 baking dish with cooking spray
  • In a large bowl mix apples, sugars, cinnamon, nutmeg, and salt.

Use tart Granny Smith apples and chop them coarsely so they hold their shape and do not turn mushy. Pour the melted butter evenly over the cake mix and tilt the pan to cover any dry spots, which keeps the top from baking up powdery. Do not stir once the butter goes on, because the layers are what make a dump cake work. Store leftovers covered in the refrigerator and reheat individual servings in the microwave.

    Oh my goodness! This is the best apple dessert I’ve ever made. Did some early season apple picking with my daughter and was looking for an easy recipe. The only thing I needed to buy was the spice cake mix. We used premier honey crisp since that’s what we had picked, but that’s the only change we made to the recipe. It was delicious served warm and even better served cold. Will definitely make again.
