It’s simply cream cheese and strawberries rolled inside bread, quickly dunked in an egg wash, cooked until golden brown, and then rolled in sweet cinnamon sugar–it is the tastiest bite that beats any traditional toast (French toast, that is)!

  • Texas toast: Texas toast works great for this dish but I have used white and whole wheat sliced bread for this recipe too. Just make sure that your bread is soft, pliable, and easy to roll without cracking.
  • Cream cheese: Make sure your cream cheese come to room temperature and is spreadable. If you buy spreadable cream cheese, it does not need to come to room temperature.
  • Strawberries: Dicing your berries nice and small will make them easier to roll and easier to eat.

These finger-friendly, easy to make French toast roll-ups are a sweet treat for breakfast or brunch. They are delicious bites of cream cheese and fresh strawberry filling that’s stuffed inside a rolled piece of cinnamon sugar-coated bread; perfectly portable and no fork needed!

  1. Flatten each slice of bread and remove the crust.
    Pro-Tip: Make sure to use a soft bread that’s easy for flattening. When flattening roll ups, be sure not too press too hard. If the rolls are too thin, they may tear when rolled.
  2. Spread cream cheese on the bread and top with strawberries.
    Pro Tip: Make sure to dice the strawberries small to make the roll ups both easier to roll and easier to eat. Be careful not to over-fill or it won’t seal well and the filling will come out when rolled and/or cooked.

  4. Whisk eggs, milk and vanilla together and set bowl aside.
  5. In a separate bowl, combine sugar and cinnamon.

Ingredients
  

  • 8 slices Texas toast
  • 4 ounces cream cheese softened
  • 8 ounces strawberries diced
  • 2 large eggs
  • 1 tablespoon milk
  • 1 tsp pure vanilla extract
  • 3 tbsp salted butter
  • cup granulated cane sugar
  • ½ tsp ground cinnamon
  • powdered sugar optional

Instructions
 

  • Roll each slice of bread with a rolling pin and trim off the crust with a knife.
  • Spread ½ Tablespoon cream cheese on each slice of prepared bread.
  • Add 1 rounded teaspoon diced strawberries on top of the cream cheese. Careful not to over fill.
  • Gently roll the bread up.
  • Whisk eggs, milk and vanilla together in a bowl. Set aside.
  • Combine sugar and cinnamon in a bowl. Set aside.
  • Dredge prepared bread rolls through the egg mixture, taking care not to saturate the bread.
  • Melt butter over medium heat in pan.
  • Add rolls to pan, seam side down to start and cook until golden brown, about 2 minutes per side. Use tongs to turn them in the pan.
  • Once fully cooked, roll through the sugar mixture until well coated.
  • Serve hot with a dusting of powdered sugar.
