I make this Dorito casserole on the busy weeknights when I need dinner on the table fast and I know everyone will actually eat it. Seasoned beef, sweet corn, and melty cheese sit under a layer of crunchy nacho Doritos, so every forkful is soft, cheesy, and crisp at the same time.

This one has been in regular rotation at my house for years. It is the dinner I hand my pickiest eater without a second thought, because it is one of the few that gets a request for seconds.

Here is what makes mine different from most. Instead of layering the chips and baking for an hour, I mix finely crushed Doritos right into the beef so the nacho flavor runs through every bite, then bake for just ten minutes. It is faster than the layered versions, and it does not turn into the soggy mess a lot of Dorito casseroles become.

I have been making this one for years, and it is the dinner nobody here ever gets tired of. My kids grew up on it, and it is still what they ask for when they want something easy and familiar. I make a pan and it is gone before I sit down.

Here’s What Most People Skip

  • Crush your Doritos twice, two different ways. Two cups go in fine, almost like breadcrumbs, and get mixed straight into the beef. One cup stays in big chunks and goes on top after the casserole bakes.
  • Most Dorito casseroles layer the chips in and bake them for close to an hour, which is exactly why they come out soggy. The chips sit in all that moisture and go limp. Mixing the fine crumbs into the meat gives you nacho flavor the whole way through, and adding the big chunks at the end keeps a real crunch on top.
  • One more thing. Do not cover it with foil while it bakes. Covering it traps steam and softens the chips you worked to keep crisp.

What You’ll Need for Dorito Casserole

Ground beef: Lean beef keeps the casserole from turning greasy. Brown it well and drain it so the base holds together instead of going watery.

Nacho cheese Doritos: The classic pick, but this is where you can have fun. Cool Ranch, Spicy Nacho, and Sweet Chili all work and each one changes the whole flavor.

Diced tomatoes with green chilies: I use the kind with green chilies for a little heat and moisture. Plain diced tomatoes work if you want it milder.

Frozen corn: It adds sweetness and a little bite against the soft beef and cheese. No need to cook it first, it warms through in the skillet.

Sour cream: This is what makes the base creamy instead of dry. Greek yogurt swaps in fine if that is what you have.

Mexican cheese blend: Some melts into the beef and the rest goes on top. A cheddar or Monterey Jack blend melts smooth and pulls everything together.

How to Make Dorito Casserole

Step 1: Prep the Pan Preheat the oven to 350 degrees and spray a 9×13 baking dish with nonstick spray.

Step 2: Crush the Chips Two Ways Crush two cups of Doritos fine, almost like breadcrumbs, and set one cup aside in bigger chunks for the top. A gallon zip-top bag and your hands do the job.

Step 3: Brown the Beef Cook the ground beef and onion in a large skillet until the beef is no longer pink. Drain any extra grease.

Step 4: Build the Filling Add the garlic and cook one minute, then stir in the corn, taco seasoning, tomatoes with green chilies, and the two cups of fine Doritos. Add the black beans here too if you are using them.

Step 5: Stir in the Creamy Layer Take the skillet off the heat and stir in the sour cream and two cups of the cheese until it looks creamy.

Step 6: Bake the Base Spread the mixture into the prepared dish and bake for 5 minutes, until warmed through.

Step 7: Add the Crunchy Top and Finish Sprinkle the remaining cup of cheese and the chunky Doritos over the top, then bake 5 more minutes until the cheese melts.

Step 8: Serve Garnish with lettuce, tomatoes, avocado, or green onions if you like, and serve right away.

Easy Ways to Switch It Up

  • Turn up the heat: Use a spicy taco seasoning, toss in diced jalapenos, or reach for a hotter Dorito flavor.
  • Add more veggies: Diced bell pepper or mushrooms mix right into the beef. Cook them down first so they do not add extra water.
  • Make it richer: Stir a couple ounces of cream cheese into the beef before it goes in the dish for a creamier base.

A Few Things Worth Knowing

  • Let the casserole rest about 5 minutes before serving so it holds together on the plate instead of sliding apart.
  • If you add extra vegetables, cook them down first. Raw veggies release water as they bake and can loosen the base.
  • You eat this one with a fork. The chips mixed inside bake in and soften into the dish, and the chunky topping is where the crunch lives.

Can I use chicken instead of beef?

Shredded rotisserie chicken, ground chicken, or ground turkey all work in place of the beef with no other changes. Just brown or warm it through before building the filling.

Do I need to thaw the corn first?

No. Frozen corn goes straight into the skillet with the seasoning and warms through as everything comes together.

How do you serve Dorito casserole?

Scoop it onto a plate or into a bowl and eat it with a fork, like any casserole. It is not a dip, so you are not scooping it up with chips. If you want more crunch, add a few extra Doritos on the side.

  • Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat: Warm it in a 350 degree oven so the chips crisp back up. The microwave works in a pinch but the top goes soft.
  • Freeze: Freeze before or after baking for up to 3 months. Thaw in the fridge overnight before reheating.
  • Make Ahead: Assemble up to 24 hours ahead, but wait to add the final Doritos and cheese until right before it bakes.

Doritos Casserole

Serves — 8
This easy Dorito casserole layers seasoned beef, corn, and melty cheese under crunchy nacho Doritos. It is the weeknight dinner my family asks for on repeat.

Total Time 40 minutes

Ingredients
 

  • 1 pound lean ground beef
  • ½ yellow onion diced
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounce bag frozen corn
  • 14.5 ounce can petite diced tomatoes with green chilies NOT drained
  • 1 cup sour cream
  • 2 cups finely crushed Doritos
  • 1 cup loosely crushed Doritos
  • 3 cups Mexican blend cheese
  • I added one cup black beans- optional
  • Sliced green onions diced tomatoes, shredded lettuce, avocado, sour cream for garnish (optional)

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray 9×13 dish with nonstick spray.
  • Gently crush the chips, set aside. Two cups should be crushed fine, more like bread crumbs and one cup should be larger chunks, to be spread on top at the end. (I put them in a Ziploc gallon bag and smooshed with my hands.)
    2 cups finely crushed Doritos, 1 cup loosely crushed Doritos
  • In a large skillet cook the ground beef and onions. Drain any extra grease.

  • Add the garlic and cook for one minute.

  • Add the frozen corn, taco seasoning, tomatoes with chiles, and two cups of finely crushed chips. (I added black beans here, too)

  • Remove from heat. Stir in the sour cream two cups of cheese.
    1 cup sour cream, 3 cups Mexican blend cheese
  • Pour into greased casserole dish and place in oven. Bake 5 minutes, until warmed through.
  • Add one cup of cheese on top, then one cup of loosely crushed Doritos and bake another five minutes until cheese is melted.
  • Remove from oven and serve.

  1. How do you serve this. do you scoop with other doritos, plain nachos, by fork. this may be a weird/stupid question…..

    1. Not a weird question at all. You serve Dorito casserole like a regular casserole. Scoop it onto a plate or bowl and eat it with a fork. The Doritos bake in and soften, so it’s not meant to be scooped like a dip. If you want extra crunch, you can add Doritos on top or on the side, but the main dish is fork friendly.
