It’s easy, satisfying, and gone from the dinner table before I even sit down. Note: Even my pickiest eater loves this recipe!

The best part about this Dorito casserole recipe is that every bite has a little crunch, a little melty cheese, and a whole lot of flavor. Corn, tomatoes, and seasoned beef hide under a blanket of crispy Dorito topping, making this casserole pure comfort food in every forkful.

Ingredients Notes

- Ground beef: You can also use ground turkey or chicken.
- Yellow onion: Adds savory flavor.
- Garlic: Fresh or jarred both work.
- Taco seasoning: Use mild, spicy, or a homemade blend.
- Frozen corn: Canned or fresh corn works too. Trader Joe’s frozen corn is my favorite.
- Diced tomatoes with green chilies: Plain diced tomatoes work if you prefer less heat.
- Sour cream: Greek yogurt is a great swap for a lighter option.
- Doritos: Nacho Cheese is classic, but Cool Ranch, Spicy Nacho, or Sweet Chili all taste amazing.
- Mexican cheese blend: Cheddar cheese, Pepper Jack cheese, or Monterey Jack cheese are great alternatives.
- Black beans (optional): Pinto beans work too.
- Optional toppings: Green onions, lettuce, tomatoes, avocado, cilantro, salsa, or extra sour cream.

How to Make Dorito Casserole
- Prep the pan: Preheat the oven to 350 degrees F and spray a 9×13 baking dish with nonstick spray.
- Crush the chips: Finely crush two cups of Doritos for the casserole and lightly crush one cup for the topping.

- Brown the meat: Cook ground beef and onion in a large skillet, draining any excess grease.
- Add seasonings: Stir in garlic, taco seasoning, corn, tomatoes with green chilies, and the finely crushed Doritos. Add black beans if using.
- Add the creamy layer: Remove from heat and mix in sour cream and two cups of cheese.

- Bake the base: Spread the beef mixture into the prepared baking dish and bake in the preheated oven for 5 minutes.

- Add topping: Sprinkle the remaining cheese and loosely crushed Doritos on top.

- Bake again: Bake 5 more minutes until the cheese is melted.
- Serve: Garnish with lettuce, tomatoes, avocado, green onions, or your favorite toppings if desired.

Make Ahead & Storage Instructions
- Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat: Warm in the oven at 350 degrees to keep the chips crisp. Avoid reheating in the microwave if possible.
- Freeze: Freeze before or after baking for up to 3 months. Thaw in the fridge overnight before reheating.
- Make Ahead: Assemble up to 24 hours in advance, but wait to add the final Doritos and cheese until just before baking.

Taco Doritos Casserole
Ingredients
- 1 pound lean ground beef
- ½ yellow onion diced
- 1 teaspoon minced garlic
- 1 packet taco seasoning
- 12 ounce bag frozen corn
- 14.5 ounce can petite diced tomatoes with green chilies NOT drained
- 1 cup sour cream
- 2 cups finely crushed Doritos
- 1 cup loosely crushed Doritos
- 3 cups Mexican blend cheese
- I added one cup black beans- optional
- Sliced green onions diced tomatoes, shredded lettuce, avocado, sour cream for garnish (optional)
Instructions
- Preheat oven to 350 degrees.
- Spray 9×13 dish with nonstick spray.
- Gently crush the chips, set aside. Two cups should be crushed fine, more like bread crumbs and one cup should be larger chunks, to be spread on top at the end. (I put them in a Ziploc gallon bag and smooshed with my hands.)2 cups finely crushed Doritos, 1 cup loosely crushed Doritos
- In a large skillet cook the ground beef and onions. Drain any extra grease.1 pound lean ground beef, ½ yellow onion
- Add the garlic and cook for one minute.1 teaspoon minced garlic
- Add the frozen corn, taco seasoning, tomatoes with chiles, and two cups of finely crushed chips. (I added black beans here, too)1 packet taco seasoning, 12 ounce bag frozen corn, 14.5 ounce can petite diced tomatoes with green chilies, I added one cup black beans- optional
- Remove from heat. Stir in the sour cream two cups of cheese.1 cup sour cream, 3 cups Mexican blend cheese
- Pour into greased casserole dish and place in oven. Bake 5 minutes, until warmed through.
- Add one cup of cheese on top, then one cup of loosely crushed Doritos and bake another five minutes until cheese is melted.
- Remove from oven and serve.

The only change I would make would be to add 1 can of sliced black olives.
add tablespoon sour cream and tablespoon of salsa after serving portion on plate.

*I substituted the sour cream with a 1/2 tsp lemon juice added to 1/2 cup whipping cream. The hint of lemon brings out the spices of the taco seasoning.

I had crushed Doritos in freezer to try this dish. Fiancée doesn’t like onions or tomatoes so I use onion powder and pulse Rotel in food processor. I also use hot chili beans and a can of diced jalapenos. The toppings are hot sauce for him and smashed avocado/sour cream for me. A delicious dish to prepare again.
I worked in a prison for years and the inmates would make this in a garage bag, mixed it all up and would cook over a radiator. I tried it and it was great. They called it a “Break”
Made this just tonight. My somewhat picky son gave me a thumbs up and said it was a keeper. I would’ve added the beans but I know he doesn’t like them. It was super easy and we will make it again for sure. Made enough to share with my neighbor.

I doubled the recipe and it’s in the oven now. I cooked it for 5 minutes but I feel it needs more time. I put it in for another 5 minutes. Not sure if I should go even longer.
