Ingredients Notes

Dorito Casserole
ingredients.
  • Ground beef: You can also use ground turkey or chicken.
  • Yellow onion: Adds savory flavor.
  • Garlic: Fresh or jarred both work.
  • Taco seasoning: Use mild, spicy, or a homemade blend.
  • Frozen corn: Canned or fresh corn works too. Trader Joe’s frozen corn is my favorite.
  • Diced tomatoes with green chilies: Plain diced tomatoes work if you prefer less heat.
  • Sour cream: Greek yogurt is a great swap for a lighter option.
  • Doritos: Nacho Cheese is classic, but Cool Ranch, Spicy Nacho, or Sweet Chili all taste amazing.
  • Mexican cheese blend: Cheddar cheese, Pepper Jack cheese, or Monterey Jack cheese are great alternatives.
  • Black beans (optional): Pinto beans work too.
  • Optional toppings: Green onions, lettuce, tomatoes, avocado, cilantro, salsa, or extra sour cream.

See the recipe card for full information on ingredients and quantities.

Recipe Variations

  • Turn up the heat: Use spicy taco seasoning, toss in jalapenos, or pick a fiery Dorito flavor for an extra kick.
  • Veggie boost: Green or red bell pepper, zucchini, onions, or mushrooms mix right in for a colorful, tasty twist.
  • Double the crunch: Spread half of the meat mixture in the dish, add a layer of Doritos, then top with the rest for an extra crispy surprise.
  • Creamy upgrade: Swirl in a bit of cream cheese before baking for an extra-rich, melty texture.

Recipe Tips

  • Don’t cover the casserole with foil during baking, this softens the chips.
  • If adding veggies, cook them slightly first to prevent extra moisture.
  • Sprinkle extra loosely crushed Doritos after baking for maximum crunch.
  • Let the casserole rest 5 minutes before serving so it holds together.

Frequently Asked Questions

How do I keep the Doritos from getting soggy?

Add the top layer of chips right before baking and avoid covering leftovers too tightly. A loose cover helps keep the crunch.

Do I need to thaw the corn first?

Nope. Add it straight from the freezer. It heats through in the skillet and saves you an extra step.

Can I double this recipe for a crowd?

Yes. Use a larger casserole dish and add a few extra minutes of baking time until everything is hot and bubbly.

Make Ahead & Storage Instructions

  • Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat: Warm in the oven at 350 degrees to keep the chips crisp. Avoid reheating in the microwave if possible.
  • Freeze: Freeze before or after baking for up to 3 months. Thaw in the fridge overnight before reheating.
  • Make Ahead: Assemble up to 24 hours in advance, but wait to add the final Doritos and cheese until just before baking.

This was delicious. We liked it with the black beans added. My only suggestion- if you know you’re going to have left overs, don’t cover the whole casserole in the Doritos on top. They will get soggy after sitting in the refrigerator and being reheated. Next time, I’ll only cover half and then put fresh chips on top reheated leftovers.

Made it for dinner tonight. Have a ton of beef we need to use up and came across this recipe. So good. Wasn’t expecting much but dang. Really good!

Forgot about sour cream but did have enchilada sauce mild so used that instead but still, so good!! Will use again. Thanks for putting this together!

I made this for my Granddaughters 2nd Birthday Party yesterday. EVERYONE LOVED IT! It was a hair bit spicy I think for my Grandbaby, but she kept at it with both hands as her little eyes were on the verge of watering. Delicious dish and wonderful memory. Thank you so kindly!

  4. My VERY picky 17 & 19 year olds loved this! Served it with refried beans and Mexican rice along with salsa and extra sour cream. Adding it to the family favorite list.

  5. Would you do anything different if you used Cheetos instead? My boyfriend loves Cheetos and I was wondering about trying it with those instead of the Doritos.

  6. Hey! I’m looking to make this tomorrow but I don’t have sour cream, do you think cream cheese would be an okay substitution?

    1. I honestly have never tried cream cheese. I don’t think it would be awful, but definitely cannot vouche for it!

      1. Thanks for the quick reply! I’m gonna give it a whirl.. when in quarantine… 🙂

    2. Would love to know how it works out! I mean, how bad could doritos, beef and cream cheese be?
