Creamy Tuscan Chicken Recipe

You are going to drool over our one-pot Tuscan Chicken recipe. The creamy homemade sauce is garnished with spinach and tasty sun-dried tomatoes. Serve alone or over pasta, this will quickly become a family dinner favorite, just as it has in our house!

I love it because I can put it together quickly and it’s fairly healthy. I usually make a quick side to go with it and we’ve got a complete and delicious family dinner.

What is Tuscan Chicken?

The name Tuscan chicken comes from the inspiration of Tuscany, Italy! Which means you get to cook with a glass of wine in hand, right?

This dish has a strong Italian flair with its sun-dried tomatoes, spinach, and Italian herbs. If you’ve ever had the Olive Garden’s Tuscan Garlic Chicken dish, this is going to be quite similar to that.

It’s so delicious and easy to make. To begin, you’ll cook up your chicken breast to be perfectly browned. Then you’ll create your delicious sauce by mixing together spices and creams. Then add the final touch of spinach and sun-dried tomatoes.

Is your mouth watering yet?

Ingredients

Don’t let this long ingredients list scare you away. I promise this dish is so easy to make.

Tuscan Chicken Ingredients

Many of the ingredients are just spices and seasonings that you probably already have on your rack at home!

  • 4 chicken breasts
  • ½ tsp of salt
  • ½ tsp of pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp garlic salt
  • 2 tbsp olive oil (or you could use the oil from the sun-dried tomatoes jar)
  • 3 tsp minced garlic
  • ½ yellow onion
  • ½ cup sun-dried tomatoes
  • 1 ½ cups fresh spinach
  • 2 cups shredded parmesan cheese
  • 2 cups heavy cream
  • 1 cup water
  • 1 chicken bouillon cube
  • 2 tbsp butter

How to Make Creamy Tuscan Chicken

  1. Mix together your salt, pepper, Italian seasoning, garlic powder, and garlic salt and divide it (you will use some now and some later). Season both sides of your chicken breast and set the rest of the seasoning aside. NOTE: Use about 2 teaspoons now, and 2 teaspoons later.
  2. In a large skillet over medium-high heat, add olive oil and chicken breasts. Let the chicken breasts cook for 5 minutes per side, or until browned.
  3. After the chicken breasts are browned, cover the skillet and turn it to medium-low heat. Allow the chicken breast to continue cooking until the internal temperature reaches 165 degrees, and is no longer pink. Depending on how thick your chicken breasts are, this may take an additional 3-5 minutes. Remove the chicken from the skillet and set aside. How to Make Tuscan Chicken Step 1
  4. Add the butter, onions, sundried tomatoes, and garlic to the skillet. Mix well and cook for 1-2 minutes over medium heat.
  5. Add in the water and chicken bouillon cube and stir well. Deglaze the bottom of the pan by using your spatula to gently scrape the bottom of the pan to get all browned bits up and into the sauce.
  6. Add in the remaining seasoning mixture and stir it all together to mix well. Allow this all to simmer for about 2-3 minutes.
  7. Add in the heavy cream and parmesan cheese and stir well to combine. When the mixture starts to gently bubble then add in the spinach and stir. How to Make Tuscan Chicken Step 2
  8. Turn the heat to low and add the cooked chicken breasts back to the skillet. Cover and let simmer for 2-3 minutes.
  9. Spoon the sauce over the top of the chicken and serve.

And there you have it! A delicious, restaurant-quality dinner that is 100% homemade.

What to Serve with Tuscan Chicken

This creamy Tuscan chicken is screaming for a delicious side dish. I tend to go for something green to add as a side, like a fresh veggie or salad. My feta and bacon green beans go great with this dish.

Another great option for a side with your Tuscan chicken is to make homemade bread (like our homemade No-Knead Bread) or even a loaf of quick store-bought garlic bread. I love having bread with this because you can scoop up every last drop of the delicious sauce! Try our Caprese Garlic Bread or go low-carb with our Cauliflower Breadsticks.

As I mentioned above, this is delicious over pasta. You can cut the chicken up and serve it over penne, spaghetti or any type of pasta!

How to Store Leftovers

Fair warning, you might not have any leftovers. This chicken is so good, we don’t tend to have much left over when I make it at my house. It typically makes enough to feed about 4-5 people, so it’s just enough for a family.

But, if you do find yourself lucky enough to have some leftovers, here’s how to store it.

You should put it in an airtight container and place it in the fridge no longer than 2 hours after serving it. If stored this way, the chicken will stay fresh in the fridge for about 3 days.

When you’re ready to eat your leftovers, simply pop it in the microwave. Be sure to stir the creamy sauce really well, about every 30 seconds to keep it from curdling when reheating.
