Our boxed Cake Mix Chocolate Chip Cookie Bars recipe combines the satisfaction of snacking on homemade chocolate chip cookies with the sweet taste and tender texture of a slice of cake. I like to refer to them as lazy cookie bars with cake mix because it literally requires a box of yellow cake mixed with butter, eggs, and chips, spread into a baking dish, and baked until slightly crispy along the edges and moist in the middle.

Cake Mix Chocolate Chip Cookie Bars ingredients.
  • Yellow cake mix: I used a box of Pillsbury yellow cake mix to serve as the base for my cookie dough, but this recipe works with any brand or flavor of mix. White cake mix, red velvet cake mix, chocolate cake mix cookie bars will all taste delicious!
  • Butter: Butter is my favorite fat source to turn a cake mix into cookies because it makes them more moist, rich, and tender than baking with vegetable oil or canola oil. Cookie bars made with butter just taste better!
  • Eggs: Eggs not only act as a binding agent in the dough, but they also add moisture and richness to the cookies, resulting in a softer and chewier texture.
  • Chocolate chips: Chocolate chips are a classic addition to cookies and complement the buttery, cake-like base created by the yellow cake mix. You can use milk chocolate chips, semi sweet chocolate chips, dark chocolate chips, peanut butter chips, butterscotch chips, or your favorite flavor.

Tips & Variations

Mixing Method: Use a hand or stand mixer to quickly mix everything together but be sure to use a wooden spoon to mix in the chocolate chips.

Customize Your Cookies: While the basic recipe calls for chocolate chips, it’s easy to customize your cookie bars with your favorite mix-ins. Try adding some chopped nuts, dried fruit, shredded coconut, sprinkles, or crushed candy to your cookie dough and experiment with different flavor combinations.

Serving Suggestions: If you’re going to eat these warm out of the oven, add a scoop of vanilla ice cream on top! It’s delicious!

I’ve learned that mini chips work best. Ive also used chocolate cake with mint chips, carrot cake with cream cheese chips, when I can find them. All were great
