- Italian seasoning

- Make The Egg Mixture: Whisk together the egg and half and half.
- Prepare The Produce: Slice the zucchini. Dip each slice into the egg mixture, then dip it into the panko mixture.
- Cook: Arrange the breaded zucchini slices in a single layer in the air fryer basket. Spray each slice with non-stick cooking spray. Cook at 400 degrees Fahrenheit for 9-10 minutes.
Pro Tip: If you sliced your zucchini thicker, add extra time. - Serve: Serve while hot. Enjoy!

Ingredients
- 1½ cups panko breadcrumbs
- ½ cup grated parmesan cheese
- 2 teaspoons onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon kosher salt
- ½ teaspoon fresh cracked black pepper
- 2 medium-sized zucchini each zucchini weighed 7 ounces
- 1 large egg
- 4 tablespoons half and half
Instructions
- Add the panko breadcrumbs, parmesan cheese, onion powder, Italian seasoning, kosher salt, and pepper to a medium-sized bowl. Stir to combine. Set it aside.
- Slice the end of the zucchini off and discard. Slice the zucchini into ⅛-inch round slices. (If you prefer a thicker slice, remember to adjust the cooking time accordingly)
- Add the egg and half and half to a small bowl. Whisk to incorporate completely.
- Line a baking sheet with parchment paper.
- Dip the sliced zucchini into the egg mixture, then dip it into the breadcrumb mixture. Lay the breaded slices onto the prepared baking sheet. Repeat for the remaining slices.
- Remove the air fryer basket and spray with non-stick cooking spray.
- Preheat the air fryer to 400°F for 3 minutes.
