Add the panko breadcrumbs, parmesan cheese, onion powder, Italian seasoning, kosher salt, and pepper to a medium-sized bowl. Stir to combine. Set it aside.
Slice the end of the zucchini off and discard. Slice the zucchini into ⅛-inch round slices. (If you prefer a thicker slice, remember to adjust the cooking time accordingly)
Add the egg and half and half to a small bowl. Whisk to incorporate completely.
Line a baking sheet with parchment paper.
Dip the sliced zucchini into the egg mixture, then dip it into the breadcrumb mixture. Lay the breaded slices onto the prepared baking sheet. Repeat for the remaining slices.
Remove the air fryer basket and spray with non-stick cooking spray.
Preheat the air fryer to 400°F for 3 minutes.
Lay the breaded zucchini slices in a single layer in the air fryer basket. Generously spray the breaded zucchini slices with non-stick cooking spray. Cook for 9-10 minutes. If you sliced your zucchini thicker, add extra time. (I cooked my zucchini in 4 batches) Serve while hot.

To Reheat: Reheat the zucchini slices in the air fryer to re-crisp the slices.
Tips:
You can substitute plain breadcrumbs for the panko, but it will not have the same texture.
You can substitute olive oil spray for the non-stick cooking spray. You can also substitute butter-flavored non-stick cooking spray for the non-stick cooking spray.
Arrange the zucchini slices in a single layer for best results. You will have cook them multiple in batches (I cooked my zucchini in 4 batches).
