Ingredients
  

Marinade

  • ¼ cup olive oil
  • 3 tablespoons balsamic vinegar
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sheet pan dinner

  • 4-6 chicken thighs boneless and skinless
  • 1 yellow bell pepper chopped into 1-inch pieces
  • 2 shallots thinly sliced
  • 1 zucchini sliced
  • 1 cup tomatoes cut in half
  • ½ cup kalamata olives pitted
  • ½ cup crumble feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • In a small bowl, combine the ingredients of the marinade, olive oil, balsamic vinegar, garlic, oregano, mustard, honey, salt, and pepper. Reserve 3 tablespoons for the vegetables later.
  • Add the chicken to the marinade. Marinate for 1 hour up to 8 hours.
  • Preheat the oven to 375˚F.
  • Place the chicken on the baking sheet with the vegetables.
  • Pour the rest of the marinade on top of the vegetables. Stir.
