Rainbow Jello Cubes

Our layered Rainbow Jello may look complicated with its intricate rows of red, orange, yellow, green, blue, and purple, but trust me when I tell you that making rainbow jello is really very easy and straightforward!

Making this rainbow jelly recipe is just as easy as preparing a regular bowl of jello with a single packet of powder and water, most layered jello recipes have an extra step of mixing in unflavored gelatin to make each layer firmer (so that it can be picked up and eaten with your fingers, without making a mess!).

How to Make Rainbow Jello

  1. Create The Purple Colored Jello: Mix together the jello packet with unflavored gelatin. Mix in boiling water, stirring continuously, until the mix is fully dissolved. Allow the jello to cool for about 10 minutes before adding it to the bottom of the 9x 13 baking dish. Pour it slowly into the dish and then chill in the refrigerator to set about 30-45 minutes.
  2. Make The White Gelatin Mixture: Add condensed milk to a shallow bowl. Dissolve unflavored gelatin with boiling water, stirring continuously until fully dissolved, and mix it into the condensed milk. Allow the condensed milk mixture to sit for 5-10 minutes until fully cooled before adding it to the baking dish. Pour the white layer over the colored layer, and chill in the refrigerator to set about 30-45 minutes.
  3. Continue Layering The Colors: Follow the directions for each colored jello, alternating each layer with a white section. After the first purple and white section, the order is as follows: blue layer, white layer, green layer, white layer, yellow layer, white layer, orange, white layer, red layer (top of the dish).
Pro Tip: There will be five white sections in between the rainbow colors. Purple will be the bottom layer, and red will be the top.
  4. Chill: Allow fully assembled Jello to chill for 4 hours or overnight.
  5. Slice And Serve: Cut into 12 squares, making two cuts long-ways and three cuts side to side. Or you can cut these squares into 24 smaller cubes making three cuts longways and five cuts side to side. Enjoy!

Tips For Making Rainbow Jello

  • You will need to purchase (2) packages of unflavored gelatin. Packages usually come with 5 packets of 10z gelatin.
  • When mixing together the gelatin and hot water, it will smell really bad!
  • Do not pour mixtures from a high range. This can cause the liquid to splatter and puncture the layers.
  • It is vital that each layer is completely set before adding the next.
  • Allow this Jello to fully set up overnight and chill before cutting.

How to Store Rainbow Jello

  • To Store: Store leftover jello squares in the fridge either in an airtight container or covered with plastic wrap for 5-7 days.

Frequently Asked Questions

How do I prevent clumps in my gelatin?

When stirring together the boiling water and gelatin, make sure you start stirring the water before adding in the gelatin. Sometimes the gelatin can clump together (which is hard to unclump). Having the water already in motion is really helpful. If you do have clumps, fork them out and discard them.

What is the white layer in this jello recipe?

The white layer isn’t actually a jello layer at all but rather a milk mixture formed by combining sweetened condensed milk with gelatin and water. The milky layer is sweet and pairs perfectly with the other fruity flavors.
