How to Make Jello Roll Ups
- Make The Mixture: Whisk together the boiling water and jello until completely dissolved. Add the mini marshmallows and stir to coat in the gelatin mixture.
- Melt The Marshmallows: Microwave the mixture for 30 seconds on high heat. Whisk until all the marshmallows have completely melted into the gelatin and the mixture looks light and frothy.
- Pour In The Pan: Pour the mixture into the pan and refrigerate for a minimum of 1 hour or until firmly set.
- Remove The Roll Ups: Run a butter knife around the edges of the pan to loosen the jello from the edges. Gently pull up one corner of the jello and lift the entire sheet out of the pan. Place onto a sheet of parchment paper, fluffy marshmallow side up, so that it is ready to roll up and slice.
Pro Tip: Be sure that your parchment paper is slightly larger than the pan of Jello roll ups. - Spiral And Slice: Starting at one end of the square, roll the jello into a spiral until you have a log. With the seam side down, slice into 12 (approximately ½ inch) roll ups.

Tips For Making Jello Roll-Ups
- After you have very lightly sprayed the pan, I like to use my fingertips to spread the cooking spray evenly over the bottom and sides of the pan. This ensures that you do not have too much spray in the pan, as that can leave a greasy film on the roll-ups once set. Greasy roll-ups are gross!
- Make sure you are using fresh mini marshmallows. If your marshmallows are old or stale, they will not melt well.
- If your roll-up log is too sticky when slicing, lightly spray the sharp knife with nonstick spray to make getting nice, clean slices easier.
- If you prefer your fluffy marshmallow layer to be a little thinner, reduce the mini marshmallows to 1-1¼ cups.
- A wire whisk works best for mixing the mini marshmallows into the hot flavored gelatin, as the whisk creates air in the mixture, which helps give that beautiful fluffy top layer when chilled.
- A 1000-watt microwave was used for testing this recipe. If your microwave differs, you may need to adjust your 25-35 seconds to heat the mini marshmallows.

- To Store: These Jello roll ups should stay refrigerated until ready to serve. You can store these in an airtight container in the refrigerator for up to 1 week.

Jello Roll Ups
Ingredients
- ½ cup boiling water
- 3 ounces packet of flavored Jello gelatin your favorite flavor – you can choose from blue raspberry, orange, lime, etc.
- 1½ cups mini marshmallows
Instructions
- Lightly spray an 8×8 baking pan with nonstick spray. You can use your fingers to evenly rub the spray over the bottom and sides of the pan as you do not want to overspray the pan, or your jello roll ups will be greasy.
- To a medium, microwave-safe mixing bowl, add the boiling water and flavored jello gelatin. Whisk to fully dissolve the gelatin.½ cup boiling water, 3 ounces packet of flavored Jello gelatin
- To the bowl of gelatin, add the mini marshmallows and stir to coat all the mini marshmallows in the gelatin.1½ cups mini marshmallows
- Heat the bowl of flavored gelatin and mini marshmallows for 30 seconds in the microwave on high heat. Remove the bowl from the microwave and whisk until all the mini marshmallows have dissolved into the gelatin and the mixture looks light and frothy.
- Pour the mixture into the prepared 8×8 pan.
- Refrigerate the pan of jello roll ups for a minimum of 1 hour or until the gelatin has firmly set.
- Carefully run a butter knife around the edges of the pan to loosen the jello from the edges. Gently pull up one corner of the sheet of firmed Jello roll up and pull to lift the sheet of jello out of the pan. Place the sheet of jello roll up onto a sheet of parchment paper, fluffy marshmallow side up so that it is ready to roll up and slice. Be sure that your parchment paper is slightly larger than the pan of Jello roll ups.
- Starting at one end of the Jello square, gently roll the jello into a spiral until you have a log.
- With the seam side down of the Jello roll up, slice the log into 12 (approximately ½ inch) slices. Be sure to use a sharp knife to get nice, clean slices.
- Transfer the Jello roll ups to a plate and serve.
