  1. Make The Mixture: Add all liquid ingredients to a large pitcher and mix well.
  2. Prepare The Popsicles: Pour the mixture into the popsicle molds. Add 4-5 mint leaves to each mold cavity, and place the tops over the pops and insert the sticks. Freeze for 6 hours to overnight.
    Pro Tip: Use a popsicle stick to push the leaves toward the bottom of the mold. They will naturally float but you can arrange them slightly with this technique. 
  3. Serve: Serve frozen and enjoy!

How to Make your Own Simple Syrup

Simple syrup disperses sweetness evenly throughout beverages of any temperature, making it a key component of many iced drinks and cocktails. While I love the ease and convenience of making my frozen mojitos with store-bought simple syrup, you certainly can make your own.

To make homemade simple syrup, add sugar and water to a small saucepan and stir until the sugar is dissolved. Let it cool, and then follow the directions above.

Should I keep my popsicles in the molds while they are in a cooler?

I don’t recommend keeping these mojito boozy pops inside the mold while they are anywhere but the freezer. If you carry the mold inside a cooler, you run a higher risk of the popsicle thawing out at different places and breaking upon releasing / pulling out.

How do I prevent the mint leaves from floating to the top of the molds?

Drown the mint leaves very well with the popsicle stick before placing the top on the mold. You won’t have complete control over them but drowning them first and pushing them to the bottom will help them gravitate less toward the top.

can I make mojito popsicles if I do not have popsicle molds?

If you do not have popsicle molds, it is easy to make popsicles using small paper dixie cups. Simply pour the mixture into the cups, cover with foil, and poke a popsicle stick through the middle. Then freeze your boozy mojito popsicles for 6 hours to overnight. Once frozen, you can peel away the paper and enjoy!

Mojito Boozy Pops

Serves — 10
Mojito Popsicles blend sweet mint, lime, and rum for a frosty Cuban-inspired delight.
Prep Time 10 minutes
Chill Time 6 hours
Total Time 6 hours 10 minutes

Ingredients
  

  • 2 cups club soda
  • 3 tablespoons simple syrup
  • 2 tablespoons lime juice
  • 1 cup rum
  • Mint leaves you will use about 40-50

Instructions
 

  • Combine the club soda, simple syrup, lime juice, and rum together in a large mixture. Mix well to fully combine.
  • Add mixture to traditional popsicle molds. See mold used in recipe in the notes below. Fill the mold up about 1- ½ in from the top.
  • Add 4-5 mint leaves to each mold cavity. Use a popsicle stick to drown the leaves, pushing them toward the bottom of the mold. They will naturally float but you can arrange them slightly with this technique.
  • Place the top of the mold over the popsicles and insert popsicle sticks.
  • Carefully place inside the freezer and allow to chill 6 hours or overnight.
  • Remove popsicles from the mold by pulling up on the popsicle stick. Enjoy!
