This easy S mores Pops recipe is a simple spin on the s’more sandwich and can be made in minutes without setting foot near a fire.

These freezer pops are prepared in dixie cups (no popsicle molds needed) and filled with layers of graham cracker crumbs, mini marshmallows, marshmallow cream, and melted chocolate; when you’re ready to indulge, just peel off the paper and enjoy!

I love to create cold twists on my favorite fireside treat, especially when it’s far too hot for open flames and you crave a cool, sweet snack.

This frozen dessert is the perfect all-season solution on a stick when you can’t get outside by the fire but you need your summer s’mores fix!

Ingredients

  • Hershey chocolate bars: You can also use Hershey’s Symphony bars or dark chocolate bars if you prefer the flavor. 
  • Heavy whipping cream
  • Marshmallow crème
  • Milk
  • Graham crackers
  • Miniature marshmallows

Substitutions and Additions

  • Add-Ins: Add a layer of color and create more fun with some sprinkles, mini M&Ms, mini chocolate chips, chopped nuts, or even shredded coconut.
  • Choose Your Chocolate: Instead of the classic Hershey’s chocolate bars, feel free to use a different brand of chocolate bar, although depending on the brand it may melt more or less quickly. You can also try chocolate chunks or chocolate chips and even make your s’mores with dark chocolate, milk chocolate, or semi-sweet chocolate.
  • Create Your Crumbles: I used honey graham crackers for this recipe but you could use cinnamon or even chocolate to make your chopped graham cracker crumbs.

How to Make layered s’mores pops

  1. Melt The Chocolate: Microwave the chocolate about 1 minute, stirring every 30 seconds until melted.
  2. Make Marshmallow Mixture: Beat whipping cream until soft peaks form. Add in the marshmallow crème, beat for 30 seconds, and blend in milk.
  3. Assemble: To each cup, add a layer of crushed graham crackers followed by mini marshmallows, melted chocolate, and then the marshmallow mixture. Repeat all layers and top with chopped chocolate and graham crackers. Insert popsicle sticks into the centers.
  4. Freeze: Freeze for 4 hours or until firm.
  5. Serve: Tear off the paper and enjoy!

  • For this recipe, I highly recommend using a stand mixer or a hand mixer. This isn’t a recipe you can make by hand with a whisk.
  • To make crushed graham crackers, you can place the graham crackers in a Ziploc bag and use a rolling pin to crumble them.
  • You can also purchase graham cracker crumbs in a box next to the pudding mix in most grocery stores. These will be a fine consistency; not coarsely crushed.

The easiest way to get crushed graham crackers is to use store-bought graham cracker crumbs (found in the baking aisle next to graham cracker crumb pie crusts and pudding mixes). You can also make your own by placing the graham crackers in a Ziploc bag and crushing them with a rolling pin.

How do I remove my s’mores pops from the paper cups?

Once your pops are frozen, simply peel off the paper and start snacking! So easy and no clean-up!

What else can I use for a handle if I do not have popsicle sticks?

Ingredients
  

  • 4 Hershey chocolate bars chopped, divided
  • cups heavy whipping cream
  • 7 oz Marshmallow crème (1 jar)
  • ¼ cup milk
  • 4 Graham crackers coarsely crushed and broken
  • ¾ cup Miniature marshmallows

Instructions
 

  • Take 2 Tbsp. chopped chocolate and set it aside. In a small bowl, microwave remaining chocolate for about 1 minute, or until melted, stirring every 30 sec. Once chocolate is completely melted, set aside.
  • Beat whipping cream with a mixer on high until soft peaks form. Then add in marshmallow crème and beat for about 30 seconds. Add milk and blend until fully combined.
  • Set dixie cups on a try and spoon 2 tsp crushed graham crackers into each cup. Then add 3 or 4 mini marshmallows, topped with about 2 tsp melted chocolate and 3 Tbsp whipped cream/ marshmallow mixture. Repeat all layers.
  • Top with remaining chopped chocolate and remaining crushed graham crackers. Insert popsicle sticks into the cups for a handle.
