Hi everyone! Amanda here again from Old House to New Home sharing a perfectly, easy appetizer idea! Appetizers are always my favorite part of any party and these Mini Chicken Enchiladas are going to be your new favorite recipe to share!

You can always find me at the appetizer table filling up on snacks before the main course even arrives. For my own parties, I have a formula for the appetizers.

I like to serve one hot dip, one cold dip, one sweet snack, and one substantial appetizer that is bigger than your normal snack. These Mini Chicken Enchiladas Cups are perfect as the larger appetizer and your guests will love them.

Cinco de Mayo is quickly approaching and I love throwing fiesta themed parties!

When I’m not blogging, I am a Spanish teacher at a high school, so Mexican culture and food is always on my mind! I love Mexican inspired recipes and so does my family, so we have it frequently!

My daughter loves anything in these little mini boat shaped flour tortillas so I always have them on hand. I know that enchiladas are typically served in a rolled, corn tortilla, but I think these mini boats work well for an appetizer!

Less mess and easy to pick up and eat as finger food! You can find these at any grocery store with the rest of the taco shells.

If you are cooking for a party, I recommend preparing the chicken mixture in advance and then just filling the enchiladas and baking right before everyone comes.

I like to use a store-bought rotisserie chicken for this appetizer to save time. I also have a favorite brand of enchilada sauce, and while you could definitely make this homemade, I find that a good quality Mexican version from the store tastes just as great!

If you are serving these for a party, set out a bunch of toppings and people can fill them with whatever they like!

I love to keep it simple and just top them with sour cream and green onion, but you could definitely serve them with guacamole, salsa, or whatever you like! Have a vegetarian in the crowd? Replace the chicken with black beans!

Mexican food is so perfect for entertaining because you rarely find someone who doesn’t like it!

Mini Chicken EnchiladasCups

Serves — 12
Mini Chicken Enchiladas are a super simple, easy and cheesy appetizer recipe! This two bite snack is perfect for any party or dinner1
Prep Time 5 minutes
Cook Time 25 minutes
Total Time 25 minutes

Ingredients
  

  • 12 mini flour tortilla boats
  • 2 cups shredded cooked chicken
  • 15 oz enchilada sauce
  • 1 ½ cups shredded cheese cheddar or monteray jack
  • toppings: sour cream, lettuce, guacamole, etc.

Instructions
 

  • Preheat a sauce pan to medium heat and preheat oven to 375 degrees.
  • Add enchilada sauce to the pan and heat until heated through, about 5 minutes. 
  • Add chicken to the sauce and reduce heat to low and let simmer for 10 minutes. 
  • Pour two heaping tablespoons of chicken into each flour tortilla and then top with a heaping tablespoon of cheese.
  • Place tortillas on a rimmed baking sheet and bake for 10 minutes, or until edges get golden brown and cheese is melted. 
  • Serve immediately with desired toppings.

  3. Where do I find the flour tortilla cups? Or, how do I make them? I would love to do this for my granddaughters!

    1. Hi Cynthia! You can find these at any grocery store with the regular tortilla shells for tacos. I usually pick mine up at Walmart. I believe that they are Old El Paso Brand
