So my dear friend, Robin, is a working mom and has 4 kids under the age of 14. Robin has a similar style in the kitchen as me… look for recipes that are quick and easy and hope that the majority of your family will eat it without many complaints. We were out for dinner the other night (our favorite type of cooking) and she was telling me about this fabulous cranberry meatball recipe that she makes for her family and they ALL love it!! I had to get my hands on it – she made me promise to tell you that she “cannot cook and you cannot fail with this recipe!” – that was all I needed to hear. So I made this tonight and
Cranberry Meatballs
Ingredients
- 3 pounds ground beef or turkey
- 2 eggs
- 1/2 tsp garlic powder
- Salt & Pepper to taste
- 1/2 cup matzo meal (or oatmeal)
- 2 – 14 oz. cans jellied cranberry sauce
- 1/2 tsp cinnamon
- 2 – 8 oz. cans tomato sauce
Instructions
Step 1 – Preheat oven to 350 degrees.
Step 2 – Cover cookie sheet with aluminum foil and grease lightly.
Step 3 – In a large mixing bowl, combine meat, eggs, garlic powder, salt, pepper & matzo meal (or oatmeal).
Step 4 – Form into 1.5 inch balls and place on the prepared cookie sheet. Bake for 25 – 30 minutes
Step 5 – While the meatballs are baking – in a mixing bowl, mix cranberry sauce, cinnamon and tomato sauce until smooth.
Step 6 – Pour mixture in a casserole dish, add meatballs, cover and bake for 1 hour.
Serve over rice. Enjoy!!
