Ingredients for the Best Pineapple Bacon Burger

- Lean ground beef: For this recipe I used lean ground beef with a 93%-7% fat ratio. However, you can use ground turkey or ground chicken for a healthier option.
- Barbecue sauce: Choose your favorite thick, smoky style, bbq sauce for this recipe. Some great options are sweet & spicy, honey barbecue or hickory brown sugar flavors. You can also skip the bottle and make a homemade bbq sauce from scratch.
- Kosher salt
- Ground black pepper
- Smoked bacon: I recommend using either standard smoked bacon slices or center cut style bacon strips for these pineapple bacon burgers. I find the thick cut bacon is too thick and does not crisp up as well during the total cooking time for the proper doneness of the burger patties.
- Fresh pineapple: You can substitute the fresh pineapple slices with canned pineapple rings, packed in 100% juice, if needed. You will need to make sure to pat them dry with a paper towel first before adding them to the burger patty
- Bakery style burger buns: Brioche buns, Hawaiian rolls, or your favorite hamburger buns will all work well for this recipe.

How to Make Pineapple Bacon Burgers: Step-by-Step
- Prepare The Patties: In a large bowl, mix together the ground beef, barbecue sauce, salt, and black pepper. Divide the meat mixture into 4 large patties, approximately 3 ½ inches in diameter and approximately ½ inch thick.
- Assemble: Arrange two slices of bacon in a criss-cross pattern and place one burger patty onto the center. Top with a slice of pineapple. Wrap the bacon slices around the pineapple bacon burger and secure with a toothpick.
- Bake The Burgers: Bake at 400 degrees Fahrenheit for 15 minutes, remove the baking sheet from the oven, and brush with barbecue sauce. Cook for another 10-15 minutes or until the juices run clear.
- Serve: Allow the burgers to rest for 5 minutes on the baking sheet, before serving in toasted hamburger buns with your favorite condiments and toppings.

Secure the bacon slices by piercing a toothpick through the center of the burger patty where the bacon pieces cross over each other. This will keep the bacon pieces securely wrapped around the burgers while cooking.

- In The Refrigerator: Wrap each cooked and cooled burger tightly in foil or plastic wrap, or place them in an airtight container. Store in the fridge for up to 3-4 days.

Ingredients
- 1 pound lean ground beef 93%-7% fat ratio
- 4 tablespoons bottled smoky style barbecue sauce divided, 2 tablespoons mixed into the lean ground beef and 2 tablespoons to brush onto the bacon slices half way through cooking.(Sweet Baby Ray’s Original brand)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 slices smoked bacon uncooked
- 4 slices fresh pineapple ½ inch thick with core removed
- 4 bakery style burger buns Brioche style used
Instructions
- Preheat the oven to 400°F. Line a large rimmed baking sheet with aluminum foil and an oven safe wire rack and set aside.
- To a large bowl mix together the ground beef, 2 tablespoons barbecue sauce, salt and black pepper, being careful not to overwork the meat to avoid the burgers being tough when cooked.
- Divide the ground beef mixture into 4, equally sized (approximately 4 ounces each) burger patties. The patties should be approximately 3 ½ inches in diameter and approximately ½ inch thick.
- On a large tray lined with parchment paper, or cutting board, place two of the bacon slices down in a criss-cross pattern (or a large X). Place one burger patty onto the center of the bacon slice X, followed by a pineapple slice on top of the burger patty.
- Fold the bacon slices up, and across, the burger and pineapple slice creating a criss-cross wrapping around the pineapple bacon burger. Secure the bacon slices by piercing a toothpick through the center of the burger patty where the bacon pieces cross over each other. This will keep the bacon pieces securely wrapped around the burgers while cooking.
- Place the assembled pineapple bacon burger onto the prepared baking sheet and repeat steps 4 and 5 until all four burgers are assembled.
- Bake the pineapple bacon burgers for 15 minutes, remove the baking sheet from the oven and brush the remaining 2 tablespoons of barbecue sauce over the bacon slices using a pastry brush. Return the burgers to the oven and cook for another 10-15 minutes or until the internal temperature reaches 160°F, for well-done, and the juices run clear. You can reduce your cooking time by 5-6 minutes for medium or medium well doneness. You can use an instant read thermometer to check your burgers for desired level of doneness.
- Toast the burger buns, if desired, while the burgers are cooking.
