This easy no-bake Monster Eyeballs recipe makes the most adorable Halloween Oreo truffles out of Oreo cookies, cream cheese, and multi-colored candy melts, then dresses them up with hair and edible eyes.

Monster Oreo Eyeball Truffles

Our Monster Eyeball recipe is a fun way to turn your traditional Oreo balls into the cutest bite-sized Halloween treats.

Halloween eyeball Oreo Truffles have a soft, moist Oreo and cream mixture in the middle surrounded by a hard candy coated shell; they’re so much fun to decorate with sprinkles and monster eyes that never blink!

Monster Oreo truffles are a fun treat to add to any holiday dessert tray, just like our Halloween Donut Hole Cake Pops and our Monster Oreo Balls and are perfect not-so-scary snacks for a haunted Halloween party or handing out as favors or gifts.

Monster Eyeballs Ingredients

Oreo Eyeball Truffles ingredients - golden oreos, candy eyes, cream cheese, green candy melts and sprinkles.
  • Golden Oreos – you can use chocolate Oreos or any flavor Oreos as well.
  • Cream cheese – Cream cheese is used in truffles to create a smooth and creamy texture, add a subtle tanginess that balances sweetness, and act as a binder for easy shaping, contributing to the rich and indulgent feel of the treat.
  • Colored candy melts – we used purple and green, but you can use any colors!
  • Halloween sprinkles
  • Large candy eyes

Substitutions and Additions

  • Use Other Oreos: You can use any flavor of Oreo cookies, such as regular, mint, peanut butter, or birthday cake. Feel free to substitute your favorite gluten-free sandwich cookies to make this a GF recipe (You need 45 cookies).
  • Create Your Coating: You can use chocolate chips or almond bark instead of the candy melts, but the final result will be brown and have a chocolate coating. Alternatively, add food coloring to white chocolate chips or vanilla almond bark. Make sure to use gel coloring as any liquid will cause the white chocolate to seize.
  • Swap The Sprinkles: To make the “hair,” shredded coconut can be mixed with food coloring and used as a substitute for the sprinkles. You can also use edible glitter or colored sugar crystals for some extra sparkle.

How to Make Monster Eyeballs

  1. Make The Middle Mixture: Crush the Oreos until they are fine crumbs. Add in the cream cheese and pulse to combine. (Image 1)
  2. Roll Until Round: Scoop the mixture and roll it into balls. Chill in the refrigerator for 15-30 minutes or up to an hour to set. (Image 2)
  3. Melt The Candy: Microwave the candy melts for 45 seconds, stir, and continue in 10-20 second increments until smooth.
  4. Dip And Decorate: Dip the Oreo balls in the melted candy to coat. Press a large eye onto the front of each truffle and sprinkle the top with color-matching sprinkles as “hair.” (Image 3 and 4)
  5. Serve: Chill for at least 30 minutes or until the candy has hardened. Enjoy!

Tips For Making Monster Eyeballs

  • Make sure to your cream cheese has softened to room temperature. I prefer using full-fat cream cheese for this recipe because I think it gives these treats the most flavor and richness. Reduced fat would still work, but they may not be as rich tasting.
  • If you don’t have a blender or food processor, you can place your Oreo cookies in a Ziploc bag and crush them with a rolling pin. Make sure you crush the entire cookie and do not remove the filling! 
  • You can use any color of candy melts you like, or mix different colors to create a unique shade. You can also use white or dark chocolate melts instead of candy melts.
  • Feel free to use any color and shape of sprinkles to decorate your truffles.
  • If you can’t find large candy eyes, you can use multiple smaller ones, a single smaller one, or make your large one by piping white and black candy melts onto a baking sheet and let them set before using them as eyes. You can also use other candy decorations, such as gummy worms, candy corn, or chocolate chips, to create different monster faces.

  • To Freeze: You can freeze your monster eyeball truffles in a freezer-safe container for 2-3 months.

Oreo Eyeball Truffles

Ingredients
  

  • 19.1 ounces family-size package of golden Oreos
  • ¾ package (8-ounce) cream cheese room temperature
  • 12 ounce bag of colored candy melts
  • ½ cup color-matching sprinkles
  • 24 large candy eyes

Instructions
 

  • Place the Oreos in a food processor and crush until well-crumbled.
    19.1 ounces family-size package of golden Oreos
  • Add in the cream cheese and pulse until well combined.
    ¾ package (8-ounce) cream cheese
  • Use a 1 ½ Tablespoon cookie scoop to scoop out dough and roll it into balls.
  • Place each truffle on a large cookie sheet lined with parchment paper.
  • Place the truffles in the refrigerator for 15-30 minutes or up to an hour to set.
  • When ready to decorate the truffles, heat the candy, melt it in a medium mixing bowl in the microwave for 45 seconds, and stir well.
    12 ounce bag of colored candy melts
  • Continue heating and then stirring in 10-20 second increments until smooth.
  • Working in batches, dip the set truffles in the melted candy until fully coated and then place them on a clean sheet of parchment paper on a hard surface.
  • Press a large eye onto the front of each truffle and sprinkle the top with color-matching sprinkles as “hair.”
