Every year, I try to get creative with new Halloween desserts, but these Frankenstein Rice Krispie Treats are a go-to that I make year after year. They are so cute and easy to make! Whether it’s for the kids to take to school, a Halloween party, or just to pass out to friends, these homemade rice krispie treats are the perfect Halloween snack!

- SALTED BUTTER: You can use unsalted instead but add a pinch of salt to help balance out all the sugar flavor in this recipe.
- MINI MARSHMALLOWS: You can use regular sized marshmallows if you’d rather. You will still need about 10 ounces.
- RICE KRISPIES CEREALS: You can use the name brand or a generic brand for this recipe.
- SEMI-SWEET MINI CHOCOLATE CHIPS: You can also use chocolate wafers if you would rather. Any chocolate that you can fully melt will work.
- MIKE AND IKE’S: You could substitute gumdrops or mini marshmallows. Any candy that gives the impression of neck bolts can be used.

How to Make Halloween Rice Krispie Treats
- Melt butter in a saucepan. Add marshmallows, stirring constantly until melted.
Pro-Tip: Keep the heat low because you do not want to overcook the marshmallows. - Remove from heat and stir in vanilla and green food coloring.
- Pour Rice Krispies Cereal in and fold all of the ingredients together.
- Transfer mixture into a prepared pan.
- After they are set, remove treats from the pan and cut into small rectangles.
- Melt mini chocolate chips in the microwave.
- Dip each rectangle into the chocolate and coat with mini chocolate chips.
- Glue candy eyes using melted chocolate.
- Pipe a zigzag or “stitched” mouth onto each Frankenstein.
Pro-Tip: Use a Ziploc bag with the corner cut off as a piping bag and fill with chocolate. - Stick Mike and Ike’s candies on both sides of Frankenstein’s head.
- Let the Treats sit for 20 minutes until all the chocolate has hardened.
Tips
- This recipe will make about 12 Frankensteins. You can also choose to make mini Frankensteins and cut the treats smaller. If you’re making a lot of “baby” Frankensteins, you will get approximately 27 treats out of a 9×13-inch pan. Make sure you get the right size of candy eyes and “bolts” for the size of monster you want to create.

- To Store: Store your Frankenstein Rice Krispie Treats in an airtight container or ziploc bag, at room temperature for up to 3 days. When storing these treats you can stack them with waxed paper in between layers, so that you can fully fill your container. You want to be sure to press out any extra air, if possible, so that your treats last longer.
- To Freeze: Freeze in an airtight container or ziploc bag, for up to 6 weeks. Thaw frozen treats for 15 minutes, at room temperature, before eating.

Getting your rice krispie treats to turn out well can be trickier than you’d expect! Here are a few tips to ensure your success. Keep the stovetop temperature low! Make sure you are stirring your marshmallows and remove them from the heat as soon as they are all melted. Overheating the marshmallows will cause them to “seize up” and give you a rock-hard rice krispie treat when they cool.
When you mix up your rice krispies and marshmallow mixture, don’t overmix it. You want to gently fold the cereal into the mixture but stop once everything is coated. Press the mixture into your prepared pan lightly. If you pack the rice krispie treats tightly you’re more likely to get a hard, difficult-to-bite treat. Lightly press it in and then leave it. Frankenstein Rice Krispies Treats
Ingredients
- ¼ cup (½ stick) salted butter
- 10 ounce package mini marshmallows
- 2 tbsp pure vanilla extract
- 9-15 drops green food coloring
- 5 cups Rice Krispies cereal
- 1 cup semi-sweet mini chocolate morsels divided in half
- Candy eyes
- Mike and Ike’s candies optional
Instructions
- Grease a 9×13-inch pan and line with parchment paper (optional) and set aside.
- Put ½ stick butter in the saucepan and heat on low until melted, about 1 minute.
- Mix in the marshmallows and stir constantly until melted, 4-5 minutes. Keep the heat low because you do not want to overcook the marshmallows.
- Remove from heat and stir in the vanilla and green food coloring.
- Pour the Rice Krispies into the pan of melted marshmallow mixture.
- Carefully fold together the marshmallow mixture and Rice Krispies until completely combined.
- Transfer the Rice Krispies mixture into the buttered pan. Press until flat and even. If it’s sticky, use another piece of parchment paper on top to help press down the treats.
- After they are set, remove the Rice Krispies treats from the pan and cut into desired shapes.
- In the microwave, melt half (½ cup) of the mini chocolate chips for 20 seconds and stir. Repeat at 10-20 second intervals until all chips are melted.
- For Frankenstein’s hair, dip the top of each rectangle into the chocolate. Pull down strands of hair with a toothpick.
- Sprinkle the remaining ½ cup of chocolate chips on the top of the hair, then lay each piece on waxed paper to dry.
- Glue the candy eyes to the Frankenstein treats with a little melted chocolate and a toothpick. (The chocolate should not show).
- Fill a ziplock bag with remaining melted chocolate, snip a small corner off, and pipe a zigzag or “stitched” mouth onto Frankenstein.
- If desired, stick mike and ike’s candies on both sides of the head, fastening with a toothpick or melted chocolate if necessary.
- Let the treats sit for another 20 minutes, until the chocolate has hardened. Enjoy!
