How to Make Chocolate Walnut Fudge

  1. Melt: Pour the sweetened condensed milk over the chocolate chips, top with butter, and microwave for 2-3 minutes total, stirring every 30-60 seconds. Stir until well combined.
  2. Chill: Stir in vanilla and nuts and pour the mixture into the prepared pan. Smooth the top and place in the fridge until set. 
  3. Serve: Slice into squares, serve, and enjoy!

Tips For Making Microwave Fudge

  • Be sure that you use sweetened condensed milk and not evaporated milk. The fudge will not thicken up with evaporated milk. 
  • Be careful not to overcook your fudge or it will become grainy.
  • I like to line my pan with foil or parchment paper so I can lift out the fudge and cut it on a cutting board instead of in the pan.
  • To cut your fudge, it’s best to use a large chef knife. You can warm the knife by running it under warm water, then dry it off with a towel before slicing.
  • Use your hands to press the fudge into the pan so it is flat and even on top.

How will I know when my chocolate chips are done in the microwave?

When melting chips in the microwave you are done when there are just a handful of chips still remaining unmelted. Stop at that point and stir because the heat will continue to melt the rest of the chips and then you won’t overcook them and risk the fudge from becoming grainy.

Why do I have to stir the fudge mixture so often? 

If you don’t stir the fudge mixture often, the middle of the chocolate will burn before the outside of the chocolate is melted. You will also end up with a grainy fudge because the crystals in the chocolate will separate.

How long does it take fudge to set?

I recommend a few hours in the refrigerator for the fudge to completely set. If you are in a rush, an hour will be good, but it may be on the softer side and harder to cut.

Ingredients
  

  • 3 cups semi-sweet chocolate chips
  • 14 ounces sweetened condensed milk
  • 4 tablespoons butter cubed
  • 1 teaspoon vanilla
  • cups walnuts roughly chopped
  • ¼ cup walnuts roughly chopped, for top of fudge (optional)

Instructions
 

  • Line a 8×8 casserole dish with parchment paper.
  • In a large microwave-safe bowl place the chocolate chips.
  • Pour the sweetened condensed milk over the chocolate chips but do not mix.
  • Add the butter cubes on top of the milk/chips.
  • Microwave on high power for about 90 seconds total (depending on the power of the microwave), stirring every 30 seconds until the butter has almost completely melted.
  • Immediately remove from microwave and stir until well combined.
  • Stir in vanilla and nuts.
  • Immediately pour into the prepared dish and spread to your desired thickness.
  • Refrigerate for at least 2 hours until set.
  • Cut and serve.
