Forgo the wings and forget the nuggets because these Buffalo Chicken Sliders are the perfect appetizer for hand-held bites and my favorite football food that’s easy to eat without making a mess!

For this simple recipe, I love to use rotisserie chicken, which is already cooked and plenty moist and juicy, so all that’s left to do is shred the chicken, mix it with buffalo sauce, top it with cheese, brush the bread with ranch dressing, and bake it into a delicious melted cheesy, meaty, mini-masterpiece.

The bread is soft and sweet and pairs perfectly with the tang and spice from the buffalo sauce that’s balanced with the cool Ranch and creamy cheese–the combination of tastes and textures make these little hot sandwiches the ultimate sandwich for snacking or serving at your party.

  • Shredded chicken: I like to use rotisserie chicken for these sliders, but you can also use leftover cooked chicken (It may not be as tender and juicy as rotisserie chicken).
  • Buffalo sauce
  • Butter
  • Hawaiian Rolls
  • Mozzarella cheese
  • Cheddar cheese
  • Blue cheese crumbles
  • Ranch seasoning (from a ranch dressing seasoning packet)

Substitutions and Additions

  • Change The Cheese: Any meltable shredded cheese, like cheddar Pepper Jack, Swiss, or Monterey Jack will taste great!
  • Switch The Sauce: Feel free to use your favorite buffalo wing sauce or hot sauce for this recipe. If you have a homemade buffalo sauce you prefer, you can also opt for that.
  • Range of Rolls: While I like using Hawaiian Rolls to make my sliders because they are easy to slice in half without separating the buns, any soft dinner roll could work. You could try regular tray buns, pretzel buns or brioche buns.

How to Make the Buffalo Chicken Sliders

This Buffalo Chicken Sliders recipe can easily be made in minutes with shredded spicy chicken that’s topped with cheese, piled on a soft bun. and baked into the ultimate snacking sandwich. Perfect for game day, party appetizers, or a quick mini-meal, you will fall in love with this finger food!

  1. Slice the Hawaiian rolls in half and place the bottom portion on the prepared baking sheet.
    Pro Tip: When slicing the rolls, keep them together as a slab; do not break into individual rolls.
  2. Melt butter with buffalo sauce and stir to combine.
  3. Add chicken to sauce and stir until chicken is completely coated.

  4. Spread the chicken mixture evenly over the bottom half of the rolls.

  5. Sprinkle shredded cheddar cheese and blue cheese over the chicken.

  6. Place the top half of the rolls on top of the cheese.

  7. Melt remaining butter, stir in ranch seasoning, and brush over the top of the buns.

  8. Bake at 350 degrees Farenheit for 10-15 minutes, until cheese is melted.
    Pro Tip: You can cover with foil and bake if the top of the rolls are browning too quickly.

I love to use rotisserie chicken as a shortcut for this recipe because the chicken is already prepared, tender, and moist. And while it does cut down on the prep time, be aware that 3 Cups of chicken usually means using ALL of the chicken, the white AND the dark meat included. If you do not care for dark meat, you might want to consider using boneless, skinless chicken breasts to make this recipe for an all-white meat alternative.

Ingredients
  

  • 3 cups shredded chicken
  • ¾ cup buffalo sauce
  • 7 tbsp butter divided
  • 1 package Hawaiian Rolls
  • ½ cup mozzarella cheese shredded
  • ½ cup cheddar cheese shredded
  • ¼ cup blue cheese crumbles
  • 2.5 tbsp ranch seasoning (from a ranch dressing seasoning packet)

Instructions
 

  • Preheat the oven to 350 degrees. Line a small baking sheet with aluminum foil and spray with cooking spray.
  • Slice the Hawaiian rolls in half and place the bottom half on the baking sheet. Keep them together as a slab, do not break into individual rolls.
  • Melt 3T butter with ¾ cup buffalo sauce. Stir to combine the sauce and butter.
  • Add the chicken to the sauce and stir until the chicken is evenly coated.
  • Spread the chicken evenly over the bottom half of the rolls. Top with mozzarella, cheddar, and blue cheese.
  • Place the top half of the rolls on top.
  • Melt remaining 4 T of butter and stir in ranch seasoning. Brush Over the top of the rolls.
  • Bake 10-15 minutes, until cheese is melted. You can cover with foil if the top of the rolls are browning too quickly.
  • Cut rolls apart and serve warm.
