Making these breakfast burritos ahead of time and having them as a breakfast option has been a lifesaver for our family! They are so easy to make, and it gives me peace of mind knowing the kids will get a healthy and delicious breakfast, even on the busiest mornings.

Ingredients / Shopping List

  • Bacon -cooked and crumbled
  • Butter
  • Potatoes -diced, frozen
  • Bell peppers
  • Red onion
  • Eggs
  • Milk
  • Salt & pepper
  • Cheddar cheese -shredded
  • Tortillas
  • Salsa -optional 
  • Fresh cilantro -optional

Substitutions and Additions

  • PROTEIN: I used bacon in this recipe. You could also use turkey bacon, ground sausage, diced ham or a veggie crumble in place of the bacon.
  • CHEESE: I have used cheddar, Colby Jack, and Monterey Jack and all were super delicious. You could also use pepper jack if you like a bit of spice!
  • VEGGIES: You can add in veggies that you like to this recipe. Any color of bell pepper would be fine. You could also take out the onions if you’re not a fan. 
  • POTATOES: I used diced, frozen potatoes, but you could also use hash browns or tater tots.

How to Make Freezer Breakfast Burritos

This Breakfast Burritos recipe will come together so quickly! Just make your ingredients, assemble, and freeze! You have an easy and healthy breakfast option ready for those busy mornings!

  1. Sauté potatoes, onions, and bell pepper.

  2. Whisk together eggs and milk, and cook.

  3. Lay out a tortilla, add cheese followed by scrambled eggs and top with the potatoes and vegetables.

  4. Tuck both ends of the tortilla and roll tightly.

  5. Cover with aluminum foil and place into a plastic freezer bag.

  6. Repeat until all burritos are assembled, then place in the freezer.

Storage Tips

  • To Store: If you don’t plan to freeze your burritos right away you can keep the breakfast burritos refrigerated in an airtight container for up to 3 days. You can store them this way after they have been thawed as well.
  • To Freeze: Freeze burritos wrapped in foil and placed into an airtight freezer container. Your burritos can be frozen like this for up to 1 month.
  • To Reheat: You can reheat burritos in the microwave or oven. In the microwave: remove aluminum foil. Heat for (4) minutes, turn over half-way through for even heating. In the oven: bake for 30 minutes at 400 degrees.

Frequently Asked Questions

If we plan to eat in the next few days, should I skip the freezing step?

I always freeze unless I am serving these the same day. They keep much better once frozen and the tortillas don’t get soggy. But, if you are eating them immediately or within 24 hours, you could skip freezing.

What else can I add to these burritos?

Just about anything you would like! We often add things like mushrooms and beans. That is a great way to put some dinner leftovers to good use. 

How to fold a burrito?

You can warm the tortilla slightly, to make it a bit more flexible. Then, place your ingredients in the center in a line. Fold the sides of the tortilla over the filling, then roll the other side of the tortilla over the filling, tucking and tightening as you roll. Wrap in aluminum immediately after and it will hold its shape in the freezer!

Ingredients
  

  • 1 pound bacon or breakfast sausage cooked and crumbled
  • 4 tbsp butter divided
  • 2 cups frozen diced potatoes
  • 1 green bell pepper diced
  • 1 large red onion diced
  • 12 large eggs
  • ¼ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups cheddar cheese shredded
  • 8 burrito sized tortillas
  • Salsa,Fresh cilantro Optional

Instructions
 

  • Cook and crumble bacon or breakfast sausage, set aside.
  • Melt 2 tablespoons of butter. Sauté potatoes, onions, and bell pepper over medium heat for 5 minutes. Set aside.
  • Melt 2 tablespoons of butter. Combine eggs and milk, season with salt and pepper. Scramble the egg mixture over medium heat for 5 minutes.
  • Assembly: Lay out a tortilla. Add 2-3 tablespoons of cheese. Layer the scrambled eggs, potatoes, and vegetables.
  • Tuck both ends of the tortilla, then roll tightly.
  • Cover with aluminum foil and place into a plastic freezer bag.
  • Repeat until all burritos are assembled.
