Our easy Broccoli Casserole recipe comes together in 5 minutes flat. It’s one of those comforting holiday side dishes you’ll wish you didn’t have to share!

Is there anything better than broccoli smothered in a creamy cheese sauce and topped with crunchy cracker crumbs? While a green bean casserole will forever be a popular soup and veggie combination, I prefer to get my greens in a broccoli cheese casserole.

While Grandma’s broccoli rice casserole will forever remain a family favorite, sometimes I like my sides a little less starchy. So be prepared for compliments because this comfy casserole is picky eater-approved. A delicious dish will always be a win when you don’t have to disguise the veggies!

Broccoli Casserole Ingredients

  • Broccoli: Broccoli is rich in vitamins and minerals and contains a host of nutritional value. I made my casserole with fresh broccoli florets, but frozen broccoli florets will also work.
  • Cream of mushroom soup: Acts as a creamy base, adding moisture and richness to this broccoli side dish. Use either a store bought can or make your own homemade soup if you have a recipe you love.
  • Mayonnaise: You can use Greek yogurt instead of mayo as a healthier option.
  • Eggs: Serves as a binding agent, helping to hold the casserole together. Make sure your eggs are at room temperature before mixing them with the other ingredients.
  • Dried minced onion: Adds flavor and depth to the casserole without the texture of fresh onions.
  • Sharp cheddar cheese: Contributes a rich, cheesy flavor and creaminess to this dish. Freshly grate the cheese yourself for best results rather than buying pre-grated cheese.

How to Make Broccoli Casserole

  1. Boil The Broccoli: Boil the broccoli for 2 minutes and drain well. 
  2. Make The Soup Mixture: Mix together the mushroom soup, mayonnaise, eggs, onions, and cheese.
  3. Stir In The Sauce: Stir the sauce into broccoli and pour into a prepared baking dish. 
  4. Bake: Sprinkle crushed crackers on top of the casserole and bake at 400 degrees Fahrenheit for 40-45 minutes.
  5. Serve: Serve warm and enjoy!

Ingredients
  

  • 6 cups fresh broccoli florets about 2 bunches
  • 10.5 ounces can cream of mushroom soup or homemade
  • 1 cup mayonnaise
  • 2 large eggs
  • 2 tablespoons dried minced onion
  • 1 cup freshly grated sharp cheddar cheese
  • 1 cup cheese crackers crushed

Instructions
 

  • Bring a large pot of water to boil. Boil broccoli for 2 minutes. Drain well.

  • In a large mixing bowl combine mushroom soup, mayonnaise, eggs, onions and shredded cheese and mix well.
    10.5 ounces can cream of mushroom soup, 1 cup mayonnaise, 2 large eggs, 2 tablespoons dried minced onion, 1 cup freshly grated sharp cheddar cheese
  • Pour over broccoli and toss to combine. Pour into greased casserole dish.
  • Sprinkle crushed cheese crackers on top. Bake at 400 degrees F for 40-45 minutes.
