Easy Broccoli Cheese Casserole
Our easy Broccoli Casserole recipe comes together in 5 minutes flat. It’s one of those comforting holiday side dishes you’ll wish you didn’t have to share!
Is there anything better than broccoli smothered in a creamy cheese sauce and topped with crunchy cracker crumbs? While a green bean casserole will forever be a popular soup and veggie combination, I prefer to get my greens in a broccoli cheese casserole.
While Grandma’s broccoli rice casserole will forever remain a family favorite, sometimes I like my sides a little less starchy. So be prepared for compliments because this comfy casserole is picky eater-approved. A delicious dish will always be a win when you don’t have to disguise the veggies!
Broccoli Casserole Ingredients
- Broccoli: Broccoli is rich in vitamins and minerals and contains a host of nutritional value. I made my casserole with fresh broccoli florets, but frozen broccoli florets will also work.
- Cream of mushroom soup: Acts as a creamy base, adding moisture and richness to this broccoli side dish. Use either a store bought can or make your own homemade soup if you have a recipe you love.
- Mayonnaise: You can use Greek yogurt instead of mayo as a healthier option.
- Eggs: Serves as a binding agent, helping to hold the casserole together. Make sure your eggs are at room temperature before mixing them with the other ingredients.
- Dried minced onion: Adds flavor and depth to the casserole without the texture of fresh onions.
- Sharp cheddar cheese: Contributes a rich, cheesy flavor and creaminess to this dish. Freshly grate the cheese yourself for best results rather than buying pre-grated cheese.
- Cheese crackers provide a crunchy topping that adds texture and flavor contrast. You can also use crushed Ritz cracker crumbs or breadcrumbs.

Serving Suggestions
This broccoli and cheese casserole is best served while still warm. It pairs perfectly with most main dishes. I love serving it as a side dish to complete my slow cooker butter chicken, air fryer turkey breast, crock pot Philly cheesesteak, or grilled salmon recipes.
Broccoli casserole is considered a classic for Thanksgiving and Christmas. It’s great for buffet-style serving and is easy to bring to potlucks and holiday parties.
Tips & Variations
- Go Gluten Free: For a gluten-free casserole, swap the soup and cheese or Ritz crackers for gluten-free alternatives.
- Pack In More Protein: Feel free to make this a chicken broccoli casserole by adding in cooked diced chicken. Use leftover chicken from last night, rotisserie chicken, or grilled chicken breasts to turn this side into a main meal. Turkey or ham will work great too!
Proper Storage
- To Store: Allow leftover broccoli casserole to cool, then store it in an airtight container in the refrigerator for 3-4 days.
- To Reheat: Reheat in the oven or in the microwave until heated through.
- Make Ahead: You can prepare the entire dish 1-2 days in advance, but leave off the cheese crackers. Cover and store in the refrigerator. Allow the casserole to come to room temperature for 20 minutes before topping with crackers and baking.
