These S’more Brownies are layered with graham crackers and marshmallows and smothered with brownie mix! Then, just when you thought we were done, we added a layer of Oreo Cookies to give it just a bit extra chocolate yumminess!

S’mores Brownie aka S’mOreo Brownie Bars

I’m not sure exactly what it is about s’mores that I love so much. It could be the warm and gooey marshmallows or possibly the melted chocolate. Honestly though, I think it is just that it reminds me so much of warm summer nights out in our backyard just hanging out with our neighbors.

What I adore about these S’moreo brownies, is that they can be enjoyed all year round…no campfire needed. I can get that taste of summer in the dead of winter!

Ingredients:

  • Graham crackers
  • Oreo cookies – I used mini Oreos (you can leave out the Oreos if you choose, but that would be just silly)
  • Marshmallow – I fell in love with the flat s’more marshmallows
  • Brownie mix (pick your favorite)

How to Make S’more Brownies (stuffed with Oreos!)

  1. Preheat oven to 325 degrees
  2. Prepare brownie mix according to the directions on your box
  3. Line a 9 x 13 glass baking dish with parchment paper
  4. Lay graham crackers all along the bottom of the dish
  5. Using a spatula, spread a layer of the brownie mix over the graham crackers – covering as much of the crackers as possible
  6. Place a layer of Oreo cookies on top of the brownie layer
  7. Layer the marshmallows over the top of the cookies (I used the flat s’more marshmallows – but I cut them each in half so there was a thin layer of marshmallow cutting marshmallow in half
  8. Use the remaining brownie batter to cover the marshmallows and along the sides of the Oreo cookies – spread it as evenly as possible.
  9. Bake for 45 minutes (this may vary depending on your oven – check around 35 minutes to see if they are done. Personally, I prefer them a little overcooked than undercooked).
  10. Take out of oven and place a layer of marshmallow on top of the brownies (again, I cut my in half). Place them under the broiler until they start to get golden brown –
    IMPORTANT NOTE: Do not take your eyes off of them, they burn really, really fast. The longest you will need to leave them is 2 minutes.
  11. Let them cool completely before cutting – otherwise you will have a huge mess on your hands! I left mine for about 2 hours before I cut them!

    This was so easy to make. They are soo ooeey gooey and delicious. I used regular sized Oreos. Everybody loved them. Definitely going to make these again.

  3. Just made this last night and it’s so good! Not too sweet. I know some said there’s came out hard , but I wonder if they didn’t use parchment paper and used spray instead? I sprayed the edges of the pan, where the parchment didn’t reach and those pieces are a bit more on the hard side-still edible though. Super easy and a huge hit with the family! We be making again!

  4. Looks delicious. Even after reading the comments and rereading the directions, I am left confused.

    The step by step worded directions do not match the step by step photos of the recipe. My question is about the layering of ingredients and baking order.

    Is the order as follows:
    1. Graham crackers
    2. Brownie batter
    3. Marshmallow layer
    4. Second layer brownie batter
    5. Bake
    6. Second marshmallow layer
    7. Broil 1-2 minutes
    ??

  5. I want to make this recipes for the coming weekend… I have a question…so do I just back the ingredients first minus the marshmellows? Or…put one layer of marshmellows let it bake for asking time take it out and then put another layer of marshmellows for 2 mins?

    1. HI Steph!- yes bake everything except the marshmallows and after everything else is baked, you add them on at the end for just a very short time (watch them carefully!)

  6. To eliminate the added sweetness from the cream filling in the Oreo’s, could I substitute with chocolate “wafers”? If so, I’d probably have to double up the wafers to equal the Oreo’s? I like sweets, I always want the key ingredient (chocolate, strawberry, lemon, banana, etc) to stand out.
