Easy Pumpkin Scones

The season of pumpkin everything is upon us, and if you’re anything like me, you are here for it. I love pumpkin, but I am especially a fan of pumpkin-flavored pastries. Muffins, cakes, bread, scones, it really doesn’t matter. If it’s a baked good and it has pumpkin spice, I am so in.

So, it should come as no surprise that I absolutely love the Starbucks Pumpkin Scones. They are heaven! But, my wallet does not love it when I buy one every time I go in for a simple cup of coffee. Luckily, I can now make them right from the comfort of home, saving myself a trip to Starbucks every time I get the craving.

These scones are soft and light and the pumpkin flavor in them is just right. They are then topped off with a vanilla glaze that adds just a right amount of sweetness. Finally, they have a drizzle of pumpkin icing to complete them and make them look just as good as they taste!

Ingredients

I have found it easiest to break the ingredients down into three categories. First, the scones themselves. Next, the white glaze. Last, the pumpkin icing.

For the Pumpkin Scones:

  • 2 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • 1 tsp pumpkin pie spice
  • ¼ cup packed light brown sugar
  • 3 tbsp granulated sugar
  • ½ cup salted butter, cold and diced into ½ inch pieces
  • ½ cup canned pumpkin puree, chilled separately in a bowl
  • 3 ½ tbsp buttermilk
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tbsp honey
  • 1 tbsp whole milk

For the Vanilla Glaze:

  • 2 cups powdered sugar
  • 1 tbsp melted butter
  • ¼ cup + 1 tbsp heavy cream, then add more as needed by 1 tbsp at a time

Pumpkin Icing:

  • 1 cup powdered sugar
  • 1 tbsp canned pumpkin puree
  • 1 tsp pumpkin pie spice
  • ¼ tsp ground cinnamon
  • ⅛ tsp allspice
  • ⅛ tsp ground ginger
  • 3 tbsp heavy cream, then add more as needed by 1 tbsp at a time

How to Make Copycat Starbucks Pumpkin Scones

Just as with the ingredients list, I have also broken down the instructions into three sections. First I’ll go over how to make the scones themselves. Next, comes the vanilla icing. Finally, the pumpkin icing. It makes the assembly much easier to see it broken down into manageable sections like this.

How to Make Pumpkin Scones

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, cinnamon, allspice, ground ginger, pumpkin pie spice, light brown sugar, and sugar. Whisk together. Add cold butter and cut together using a pastry cutter, two knives, or you could also put the dry ingredients in a food processor and pulse until mixed.
  3. In a separate large mixing bowl, combine chilled pumpkin puree, buttermilk, egg, vanilla extract, and honey. Stir with a whisk to combine. Add wet ingredients into the bowl with dry ingredients. Stir with a large mixing spoon until just combined. Lightly flour a flat surface and set dough down. Knead together several times to fully combine. Pat out and shape into an 8 inch round circle. How to Make White Glaze for Pumpkin Scones

  1. In a medium mixing bowl, add powdered sugar, melted butter, and heavy cream. Whisk together until no lumps remain. It should be on the thicker side, not runny. If you need to add additional cream add it in by 1 tablespoon at a time until you get your desired consistency.scones with frosting on a wire rack
  2. Spoon and spread the glaze over the top of each scone. Let the glaze set for at least 20 minutes.

How to Make the Pumpkin Glaze for Pumpkin Scones

  1. In a medium mixing bowl, add powdered sugar, pumpkin puree, pumpkin pie spice, ground cinnamon, allspice, ground ginger, and 3 tablespoons of heavy cream. Whisk together until no lumps remain.pumkin icing steps
  2. Add glaze to a piping bag with a small round tip. Drizzle the pumpkin glaze over the scones. Allow glaze to set for at least 20 minutes.

Pumpkin Scones:

    My husband and I really enjoyed these! I haven’t had the Starbucks version to compare to. I followed the scone recipe almost exactly (give or take with the spices) and created a more simple glaze using your recipes as inspiration. Thank you for the great recipe, will save this one.
