These peanut butter balls with rice krispies are the easiest no-bake treat I make, and they never last long around here. Soft, creamy peanut butter on the inside, a little crunch from the cereal, and a thick dark chocolate shell over all of it. You are going to want a double batch.

I make these all year, but at Christmas they are non-negotiable and hold a permanent spot on my cookie tray. Every batch I set out to cool comes up a few short, because my family picks them off one at a time while the chocolate is still setting.
Most rice krispie peanut butter balls go one of two ways. The cereal takes over and the balls crumble the second you dip them, or there is so little that the crunch gets lost. Mine hold together in the chocolate and the peanut butter still leads, with enough cereal for a crackle in every bite.

Why I Pulled the Cereal Back When I Retested These
When I went back to redevelop these, the cereal was the whole story. I started at two and a half cups, and it buried the peanut butter and left the balls crumbly right when I needed them to hold for dipping. Pulling it back to two was the fix. Now the peanut butter leads again and every bite still has that crackle.


What You’ll Need
- Creamy peanut butter: Reach for a commercial brand like JIF. I do not use natural peanut butter here. The oil separates and throws off the texture, and you end up with a filling that is loose instead of scoopable.
- Powdered sugar: This sweetens the filling and helps it hold its shape. Granulated sugar will not dissolve into the peanut butter the same way and leaves you with a grainy bite.
- Rice Krispies cereal: The crunch. Crush it lightly so the pieces still have some size to them. Crush it to dust and you lose the texture that makes these different from a plain peanut butter ball.
- Dark chocolate melting discs: I use Ghirardelli dark chocolate discs because they melt smooth and set with a real snap, no shortening needed. When I retested this I ran it with dark, milk, and white chocolate, and all three work, so use whichever your family likes best.

How to Make Peanut Butter Balls with Rice Krispies
Step 1: Line the Trays and Mix the Filling
Line 2 large rimmed baking trays with parchment paper or silicone baking mats and set them aside. You need both, one for chilling the balls and one for the dipped ones. Soften the peanut butter in the microwave for 30 seconds so it stirs easily, then mix it with the melted butter and powdered sugar until smooth. Get every streak of sugar worked in before the cereal goes near it.
Step 2: Fold In the Cereal
Fold the lightly crushed Rice Krispies in gently with a spatula. Fold, do not beat. Beating breaks the cereal down and you lose the crunch that makes these worth making.
Step 3: Scoop and Chill
Using a 1-inch cookie scoop, scoop the mixture into about 35 level balls and place them on one of the prepared trays. Chill for up to 1 hour or until firm. Once they are set, roll each one smooth between your palms so the chocolate coats evenly.
Step 4: Melt the Chocolate
Melt the dark chocolate in the microwave on high for 1 minute, then stir. Continue heating in 30-second bursts, stirring between each one, until fully melted and smooth. Stopping to stir is what keeps it from scorching and seizing on you.
Step 5: Dip and Transfer
Dip each chilled ball into the chocolate with a fork and roll it around to coat completely. Lift it out, tap the fork on the side of the bowl to knock off the excess, then use a second fork or toothpick to carefully slide it onto the second prepared tray.
Step 6: Drizzle and Set
Once all the balls are dipped and the chocolate has started to harden, use a spoon to drizzle any remaining melted chocolate over the tops in a decorative pattern. This covers any dipping flaws and uses up the leftover chocolate. Return the tray to the refrigerator for 15 minutes until the chocolate is fully hardened and set.
Easy Ways to Switch It Up
Swap the chocolate: Dark, milk, or white all work. I tested all three. White chocolate with a dark drizzle on top looks great on a holiday tray.
Use almond bark: Chocolate almond bark melts and sets just as cleanly as the discs, with nothing added. Follow the melting directions on your package.
Clean up the bottoms: While the chocolate is still wet, run a toothpick along the puddle at the base of each ball. Once set, the excess snaps right off for a clean edge.

How to Store Them
Store these in an airtight container in the refrigerator for up to 1 week. They also freeze well. Keep them in an airtight container in the freezer for up to 2 months and thaw them in the refrigerator before serving. They can go out chilled or at room temperature, whichever your tray needs.

Ingredients
- 1½ cups creamy peanut butter (JIF brand)
- 5 tablespoons unsalted butter melted and cooled
- 1½ cups powdered sugar
- 2 cups Rice Krispies cereal (lightly crushed)
- 20 ounces dark chocolate melting discs (Ghirardelli brand)
Instructions
- Line 2 large rimmed baking trays with parchment paper or silicone baking mats. Set aside.
- Heat the creamy peanut butter in a small, microwave-safe bowl for 30 seconds or just until the peanut butter is melted and easy to stir.1½ cups creamy peanut butter
- In a large mixing bowl, add the creamy peanut butter, unsalted butter, and powdered sugar. Stir until well combined and smooth.5 tablespoons unsalted butter, 1½ cups powdered sugar
- Gently fold in the lightly crushed Rice Krispie cereal, using a rubber spatula, until all the cereal is coated with the peanut butter mixture.2 cups Rice Krispies cereal
- Using a 1-inch cookie scoop, scoop out 28 level balls and place them onto one of the prepared baking trays. Repeat until all the rice crispy mixture has been used.
- Place the baking tray into the refrigerator to chill the scoops for up to 1 hour or until firm. Once firm, lightly roll each ball in the palms of your hands to smooth the outer layer. This makes the dipped rice crispy peanut butter balls look better when dipped into the chocolate.
- In a microwave-safe bowl, add the dark chocolate melting discs. Heat on high for 1 minute, then stir. Heat another one to two 30-second intervals until the dark chocolate is melted and stirred smooth. Be sure to stir between each heating interval to ensure that you do not burn your dark chocolate, or it may seize up.20 ounces dark chocolate melting discs
- Using a fork, carefully dip a rice crispy peanut butter ball into the melted dark chocolate and roll around to completely cover it in the dark chocolate.
- Using the fork, lift the dark chocolate-coated rice crispy peanut butter ball out of the bowl and gently tap the fork on the side of the bowl to allow any excess dark chocolate to drip back into the bowl. Using a second fork or toothpick, very carefully slide the dark chocolate dipped rice crispy peanut butter ball onto the second prepared baking tray. Repeat until all the rice crispy peanut butter balls have been dipped into the dark chocolate.
- To create a decorative drizzle on the tops of each dark chocolate-coated rice crispy peanut butter ball, use a spoon to drizzle some of the remaining melted dark chocolate in an ornamental pattern over the coated rice crispy peanut butter balls once the dipped balls have started to harden and set. This is a great way to cover any flaws from dipping and to use up any excess melted dark chocolate.
- Place the tray of dark-coated rice crispy balls back into the refrigerator for 15 minutes to set and harden the dark chocolate coating. Once the dark chocolate coating has fully hardened, you can remove the rice crispy peanut butter balls and place them onto a serving platter.
