My little guy has one more year at home before he starts Preschool–where does the time go? However, my husband is a teacher and he is already watching his summer break slip by all too quickly! With “Back to School” talk in the air, I thought it would be fun to share one of my favorite simple lemon cake mix cookie recipe with a fun printable that’s perfect for the first day of school!

Lemon Cake Mix Cookies
1 Package of Lemon Cake Mix
1/3 cup oil
1 tbsp lemon juice.
Preheat oven to 375 degrees. Combine all ingredients. Beat at low speed until well blended. Shape into 1-inch balls. Place on cookie sheet. Bake for 7-8 minutes until lightly browned. Cool 1 minute on cookie sheet.
Are you ready for school to start? I’m not ready for my husband to go back to his “regular” job! We still have a few mini vacations to do before we are ready to accept the fact that summer is ending all too quickly! 🙂 Enjoy!
