How to Make Grinch Truffles
- Make The Middle Mixture: Crush the Oreos into fine crumbs and combine with the cream cheese spread until a thick mixture forms.
- Form Truffle Balls: Scoop the mixture into balls, roll them smooth, and place them on a baking sheet. Chill for 30 minutes to an hour or until firm.
- Melt: Microwave the vanilla almond bark for 1 minute and then stir well. Continue to microwave in 15-30 second increments until melted.
Pro Tip: This should take about 2 minutes total. Be sure to stir in between each heating so that the bark doesn’t seize up. - Color and Coat: Stir green gel food coloring into the melted almond bark. Dip the truffle balls, one by one, until fully covered. Place a heart sprinkle onto each truffle and then return to the refrigerator for 30 minutes to an hour, until the coating is fully hardened.
- Serve: Serve cold or at room temperature. Enjoy!
Tip From Our Recipe Developer
- You can substitute your favorite Oreo cookies instead of regular ones if you would like.
- You can use regular cream cheese if you wish but you will need to soften it before using. It should be at room temperature, and you will likely need less than ½ cup.
- You can use any heart candy or sprinkle you like. You can also decorate these with other holiday sprinkles or leave them plain if you prefer.
- It is easier to combine the Oreo crumbs and cream cheese spread with your hands rather than with a mixing spoon.
- Do not use liquid food coloring or the almond bark will seize.
Storage
- To Store: Store your truffles covered, in an airtight container in the refrigerator for up to 2 weeks.
- To Freeze: Freeze your truffles, well-wrapped and in a freezer-safe bag or container, for 3-4 months.
Why Did my Chocolate Sieze When I added the Food Coloring?
The type of gel food coloring really matters. I recommend double-checking and ensuring that the food coloring is oil-based or powdered food coloring. It’s essential that you avoid contact with water at all costs. Even a drop of water can cause chocolate to seize. We chose the almond bark to prevent seizing, but if you are still struggling, you may want to substitute white or green candy melts instead.
This is an example of oil-based food coloring.
This is a cheaper Wilton version of a gel-based food coloring too. It might be sold in some stores too.

Can you use something diff than almond bark- allergy related
I make these every year as my family loves them! I noticed a lot of comments about the chocolate seizing up. You must use a food coloring that’s not water based. I bought a gel food coloring that also made my chocolate seize so what I did was
1- Fill a bowl with hot water.
2- Place all of your coloring to a zip lock bag and put it in the water to warm up for about 10 minutes or so
3- In a separate bowl add 1 teaspoon of vegetable oil then a few drops of the coloring of your choice
4- Melt your chocolate according to the package. Once it’s melted and smooth mix it with the colored oil mixer a few tablespoons at a time.
I have only done this with a small amount of chocolate that I use for my drizzle and decorate with. At one point I did notice my chocolate starting to thicken up a little to much so I added a few more drops of oil, this also allowed me to add more coloring for a richer deeper color.
Pinterest fail for me. Guess I’ll try the melting things next time. 🙁
I’m trying to use gel food coloring and my bark seizes every time. I got the gel food coloring from walmart but is there a trick or a different brand I should get? Thanks!
It could be that you are adding too much at a time of the food coloring. You need to add it in very small amounts – like 1-2 drops at a time.
Sorry but mine did not come out well at all. The batter was did not come out smooth like the picture shows, still pretty crumbly even after mixing with my hands, and the melting wafers seized up even using gel food coloring. Not sure what went wrong.
these are genuinely the BEST and they’re so easy to make 🤯🤯 thanks so much for sharing!!
is it the entire Oreo or just the choc cookie part to needs to go in the food processor?
The whole cookie with the stuffing. Enjoy!
This not only cute but I love that it can be ahead and go in the freezer!
Just a question, can I use the toll house chips and melt them? Having a girls nite next week and thought these would be great little sweet thing.. Or do I need to use melting chocolate?
So you can use chocolate chips, but I think melting chocolate, like almond bark, works soooo much better because it is made for this purpose. If you do use chips, add a tablespoon of coconut oil or vegetable oil while microwaving – this helps the chocolate melt more smoothly
AWESOME 👏🏼👏🏼👍🏼❗️ thank You FOR Sharing 👍🏼♥️ this LOOKS GREAT 😊The Grinch Story IS GREAT 👏🏼❗️G-d♥️Bless
