Ingredients

  • Medjool dates
  • Goat cheese
  • Bacon
  • Honey

Substitutions and Additions

  • Grab Your Glaze: Instead of honey, you can brush the top of the bacon with maple syrup or fruit preserves before or after baking.
  • Replace The Wrap: You can try wrapping your dates in prosciutto or pancetta instead of bacon. However, keep in mind that the cook time will be altered.
  • Choose Your Cheese: Although I am partial to the taste of tangy goat cheese in this recipe, you can experiment with your other favorite flavors. Try making your dates stuffed with cream cheese, blue cheese, gouda, brie, Boursin, ricotta, or even a mixture of cheeses.
  • Create Some Crunch: Feel free to add nuts to your stuffed dates. You can place a whole almond or a pecan half in the center for a bit of added crunch.

How to Make Bacon-Wrapped Dates

  1. Stuff The Dates: Remove the pits from the dates and stuff them with the goat cheese.
  2. Wrap With Bacon: Wrap a slice of bacon around each date and place seam-side down on the baking sheet. Drizzle with honey.
  3. Bake: Bake at 400 degrees Fahrenheit for 12 minutes, flip the dates over, and drizzle with the remaining honey. Bake for an additional 10-13 minutes until the bacon is crispy.
  4. Serve: Serve warm and enjoy!

How Do I Pit My Dates?

The easiest way to pit a date is to use a small paring knife. Cut a slit lengthwise down each date, keeping them attached on one side. Gently pull the date open and remove the pit. If you can find pitted dates, you can purchase those to save the step of pitting the dates yourself.

Tip From Our Recipe Developer

  • Feel free to secure the bacon with a toothpick. You can serve your dates with the toothpicks intact, or remove them for a more polished presentation.
  • Make sure to flip the dates as they cook so that the bacon becomes crispy on all sides.
  • You can find dates in either the produce section of the grocery store in a carton or in a bag near the raisins and prunes.
  • To save time, you can use pre-pitted dates.

Storage

  • To Store: Store your bacon wrapped dates in the refrigerator in an airtight container for up to 3 days.
  • To Reheat: Reheat in the oven or microwave until heated through.

Frequently Asked Questions

Should I use thick-cut bacon or classic-cut bacon?

For this recipe, you will want to use classic-cut bacon. Using thick-cut bacon will leave you with a chewy texture instead of the crispy bacon texture. They are also thin and flexible, making them ideal for wrapping. And because they cook faster than thick-cut bacon, you will reduce the risk of overcooking the dates.

Why drizzle the honey on the dates?

I love drizzling the honey on the dates because it helps give the appetizer a salty-sweet flavor. It also makes a delicious glaze to the outside of the bacon.

Can I prepare my dates in advance?

Yes, you can prepare your dates up to a day in advance. Assemble the dates according to the directions, place them into an airtight container, and store them in the refrigerator. When you’re ready to bake, place the bacon wrapped dates on a baking sheet and bake as directed.
