Parmesan Truffle Fries Recipe

Truffle french fries are not your average finger food – this upscale treat is crispy on the outside, tender on the inside, and perfectly seasoned with truffle oil, fresh parmesan, and parsley and baked until golden brown.

This finishing oil is a heart-healthy ingredient that adds the flavor and aroma of truffles to so many dishes – drizzle it on mashed potatoes, french fries, pasta, and pizza and add character and complex tastes to an otherwise simple side dish or main meal.

What Are Truffle Fries

Truffle Fries are french fries with a flavor twist — they are typically seasoned with salt, pepper and parmesan cheese and tossed with truffle oil or truffle shavings. Truffle fries have an earthy or musky taste which comes from the truffles.

Making your truffle fries at home is a great way to serve a healthier side. I prefer to bake my fries in the oven instead of deep frying them in oil; it cuts down on calories and fat without sacrificing the flavor.   • Russet potatoes: The best type of potatoes for making truffle french fries are Russet (aka Idaho potatoes) and Yukon gold potatoes. Russet will give you that more traditional restaurant-style tasting french fry, while Yukon has a deeper and richer flavor.
  • Olive oil
  • Salt and pepper to taste
  • Truffle oil: Make sure you use a good quality truffle oil. Many truffle oils are artificially scented with truffle flavor. These are the ones to avoid! Instead, opt for a good quality olive oil that’s been infused with real black or white truffles. Start with 1 tablespoon and adjust to your taste.
  • Freshly grated parmesan cheese: You can easily make these truffle fries vegan simply by omitting the Parmesan cheese altogether or using a plant-based Parmesan cheese instead.
  • Chopped parsley

How to Make Truffle Fries

  1. Prepare The Potatoes: Peel, cut, and soak the french fries in cold water for 30 minutes.
  2. Bake: Dry french fries, season to taste, drizzle with olive oil, and toss to coat. Bake in a single layer at 425 degrees Fahrenheit for 25-30 minutes, flipping halfway through.
  3. Season And Serve: Season with additional salt and pepper and drizzle with truffle oil. Garnish with parmesan and parsley and enjoy while hot! Serve with aioli for dipping. Enjoy!

How To Make Truffle Fries In the Air Fryer

Place the seasoned french fries in the air fryer basket and cook for 17 minutes at 370. (all air fryers cook a bit differently, cook until you achieve your desired crunchiness!) Drizzle with truffle oil and garnish with parmesan and parsley.

Why soak potatoes in water before cooking?

Soaking potatoes in water will remove some of the starch from the outside to help them cook up crispier. It also helps to prevent the fries from sticking together when they are baked and from browning too fast.

Ingredients
  

  • 4 russet potatoes peeled and cut into thin even french fries
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 tablespoon truffle oil or more to taste
  • ¼ cup freshly grated parmesan cheese
  • 1-2 tablespoons chopped parsley
  • *optional – aioli for serving

Instructions
 

  • Preheat the oven to 425 degrees and line a sheet pan with parchment paper.
  • Peel potatoes and carefully cut them into thin even french fries.

  • Transfer the fries to a large bowl filled with cold water and allow them to soak for 30 minutes.
  • Thoroughly dry the french fries using a clean kitchen towel.
  • Place dry french fries on the prepared sheet pan, season to taste, and drizzle with olive oil. Toss to evenly coat being careful to keep fries in a single layer.
    1 tablespoon olive oil
  • Bake for 25-30 minutes, flipping halfway through cooking time.
  • Remove fries from the oven, season with additional salt and pepper if desired, and immediately drizzle with truffle oil. Garnish with parmesan and fresh parsley and enjoy immediately while hot! Serve with aioli for dipping!

Tips:
  • Time the cooking of your fries to be ready when you are ready to eat them. If you are serving them as a side be sure your main dish is ready so fries can be served hot!
  • You can use either white or black truffle oil for this recipe based on your personal preference. Start with 1 tablespoon and adjust to your taste.
  • A garlicky aioli is a wonderful accompaniment to these fries.
