Poppyseed Chicken Casserole - an easy and delicious family dinner recipe

If you’re like me, the hardest part about meal planning for your family is coming up with meal ideas. Among my arsenal of quick and easy dinner ideas is this Poppy Seed Chicken Casserole. Chicken Casserole is one of my husband’s all time favorite recipes. It’s really simple and comforting and I can always guarantee everyone in my family will enjoy it. I usually have all the ingredients on hand (which is great because I hate running to the store for just 1 or 2 things!) and you can prepare it in advanced so that it’s ready to pop in the oven at dinner time.

Poppy Seed Chicken Casserole

from Tastes Better From Scratch

1 cup long-grain white rice
2 cups cooked, diced chicken (about 2 smaller chicken breasts, or rotisserie chicken)
1 can cream of chicken soup
1/4 cup mayonnaise
1/2 cup sour cream
1 cup diced celery
1/4 cup slivered almonds
1 Tbsp lemon juice
2 Tbsp grated sweet onion
1/2 tsp salt
1/4 tsp crushed black pepper
1/4 tsp garlic powder
1 Tbsp poppy seeds, divided
1 cup crushed ritz crackers
1 Tbsp butter, melted

Directions:

Cook rice according to package instructions. Set aside.
Mix together rice, chicken, soup, mayo, sour cream, celery, almonds, lemon juice, onion, salt, pepper, garlic powder, and 1/2 tablespoon of poppy seeds. Pour mixture into a greased casserole dish and smooth into an even layer.
Mix crushed crackers and melted butter together. Sprinkle over casserole mixture. Sprinkle remaining 1/2 tablespoon of poppy seeds on top. Bake at 375 degrees F for 18-20 minutes or until golden brown.
