Cloud bread, or oopsie bread, is a fluffy, low-carb, and gluten-free alternative popular in keto and health-focused diets. Whipped to incorporate air, it bakes into a soft, cloud-like texture, perfect for sandwiches, burgers, or snacks. With almost no carbs, it’s versatile and easy to customize with spices, herbs, or sweeteners.

Ingredients for 3-Ingredient Cloud Bread

  • Extra large eggs: The main ingredient used to make cloud bread! Make sure they’re at room temperature, and separate the whites from the yolks carefully. Even a tiny bit of yolk can prevent the egg whites from whipping properly, so handle it with care for the best results.
  • Cream of tartar: Acts as a binder and stabilizer for the egg whites and helps speed up the whipping process. If you don’t have cream of tartar, you can try using 1 teaspoon of white vinegar or lemon juice for every ½ teaspoon of cream of tartar.
  • Cream cheese: Please soften to room temperature before using. You can use 3 tablespoons of Greek yogurt instead of the softened cream cheese. To make this bread recipe completely dairy-free, use coconut cream or your favorite dairy-free yogurt. Keep in mind that it may alter the taste and texture of the bread.
  • Kosher salt (this is optional, but I highly recommend a pinch of sea salt or kosher salt. Otherwise, the bread has no taste.)

Step-by-Step Guide to Making Cloud Bread

  1. Separate: Separate the egg whites from the yolks.
  2. Prepare Stiff Peaks: Add the cream of tartar to the egg whites and whip with an electric hand mixer (or stand mixer fitted with whisk attachment) on high until stiff peaks form. Set the bowl aside.
  3. Make The Yolk Mixture: Whisk together the egg yolks, salt, and cream cheese until completely smooth.
  4. Fold: Using a silicone spatula, fold the egg whites into the egg yolk mixture, one cup at a time.
  5. Make Mounds: Spoon the mixture into 6 mounds on the parchment paper prepared baking sheet. Bake at 300 degrees Fahrenheit for 25 to 30 minutes until golden brown.
  6. Serve: Cool on the pan for 5 – 10 minutes before serving. Enjoy!

As I said, this is a basic cloud bread recipe, but there are so many sweet and savory ways to revise the flavor profile. Because, after all, low-carb food is meant to be fun and shouldn’t be bland or boring!

  • Bake Garlic Bread: Sprinkle on garlic powder, Italian seasoning, parmesan, and parsley, and you’ll have a garlic roll recipe.
  • Bake Cloud Bread Bagels: Spread a wedge of Laughing Cow Spreadable Cheese Wedges (there are a ton of flavors) or a smear of cream cheese on top and then sprinkle with Everything But the Bagel seasoning! It’s like eating a bagel without the carbs that come with it!
  • Serve Them Churro Style: With melted butter and a cinnamon sugar substitute mixture, you can make your cloud bread taste like churros!

  • Prepare The Peaks: Be sure that NO egg yolk is in the egg whites, or it will not form stiff peaks.
  • Don’t Overwhip The Whites: Make sure not to overwhip the egg whites as they can become dry and grainy. Stop once they reach stiff peaks and have a shiny, smooth texture. When you turn the bowl upside down, you will know your eggs are ready if the whites stay in place.

  • 3 extra large eggs room temperature
  • ¼ teaspoon cream of tartar
  • 3 tablespoons (1.5 oz) cream cheese softened (or 3 tablespoons greek yogurt)
  • teaspoon kosher salt

Instructions
 

  • You will need 2 medium size glass mixing bowls. They will need to be completely clean, no soap or residue of any kind. Even the smallest amount of missed residue of any kind will keep the egg whites from forming stiff peaks. The batter will be watery and will not bake properly.
  • Preheat the oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Separate the eggs into the 2 glass bowls. Be certain that NO egg yolk is in the egg whites, or it will not form the stiff peaks.

  • Add the cream of tartar to the egg whites.
    ¼ teaspoon cream of tartar
  • Using an electric handheld mixer, whip the egg whites on high until they form stiff peaks, about 3 minutes. Set the bowl aside.
  • Using a whisk, combine the egg yolks, kosher salt and softened cream cheese. Whisk the yolk mixture until completely smooth and no cream cheese chunks are visible.
    3 tablespoons (1.5 oz) cream cheese, ⅛ teaspoon kosher salt
  • Using a silicone spatula, carefully fold the egg whites into the yolk mixture a cup at a time. Gently fold until the whites are completely combined.
  • Gently divide the mixture into 6 mounds on the parchment paper, spaced at least 3-4 inches apart.
  • Bake for 25 to 30 minutes until golden brown.
  • Allow the bread to rest and cool on the pan for 5 – 10 minutes.

    Will definitely try it once I get the amounts on this recipe. Should have said how much Cream of Tsrtar and creme cheese. Now I have to guess.

    1. I use a nutrition plug in to calculate so that is what it is telling me. However, I would recommend checking on your own nutrition calculator for the greatest accuracy.
