  • Smoked sausage: Smoked sausages vary widely in flavor profiles, ranging from mildly seasoned sausage to intensely spicy sausage. Pick your favorite veal, beef-blend, pork sausage or choose chicken links for a lighter option.
  • Barbecue sauce: I used Sweet Baby Rays, but pick your favorite flavor, from hot & spicy, hickory brown sugar, honey, to anything tangy. Use a store-bought bottle or make your own homemade bbq sauce.

How to Make BBQ Sausage Bites

  1. Coat: In a medium size mixing bowl, stir together the sausage pieces and BBQ sauce until coated.
  2. Spread: Spread the coated sausage pieces into the prepared baking dish.
  3. Bake: Bake uncovered in a 350 degrees Fahrenheit preheated oven for 45 minute, stirring every 15 minutes until the BBQ sauce is reduced and bubbly.
Pour the barbecue sauce over the bites and stir to coat.

Barbecued sausages are one of my staple game day appetizer recipes! They are perfect for everything from a tailgate party, savory snack, to an appetizer for your holiday dinner.

Spear the bbq sausage links with toothpicks or mini skewers for easy, mess-free eating, serve them with a side of dipping sauce, such as honey mustard, dijon mustard, spicy sriracha mayo, or ranch; pair them with other fun finger foods (like bacon wrapped pickles and cowboy sliders) to round out a snack spread.

Tips & Variations

  • Coat And Cook: Once coated in sauce, you can now bake your bites right away or cover and refrigerate them until you’re ready to eat.
  • Stop The Sticking: Spray a bit of non-stick spray to prevent sticking to the pan, but don’t overdo it since sausage often releases some fat.
  • Broil The Bites: For crispier edges, you can broil the sausage for 2 to 3 minutes.
  • Got A Grill? The sliced sausage can be skewered, coated and cooked on the grill until crispy.

Proper Storage

  • To Store: Store any leftovers in an airtight container or ziplock bag in the refrigerator for up to 3 days. 
  • To Freeze: Store in a freezer-safe bag or container for up to 2-3 months in the freezer. Allow the sausage bites to thaw overnight in the refrigerator before reheating.
  • To Reheat: To reheat, you can heat in a 350 degrees F oven for 8 to 10 minutes, or in a microwave for 1 to 1 ½ minutes.

  • 28 ounces (2 14-ounce) packages skinless smoked sausage sliced into 1 inch pieces (I used Eckrich brand)
  • cups BBQ sauce

    Instructions
     

    • Preheat the oven to 350°F. Spray a 9×13 baking dish with nonstick cooking spray.
    • In a medium size mixing bowl, stir together the sliced sausage pieces and BBQ sauce until completely coated.
