A piece of cake on a plate, with Strawberry and Lemonade

These Strawberry Lemonade Bars are the perfect summer treat! They are delicious with fresh berries and a hint of lemon thrown in. I cut mine into bite size pieces and they were the perfect size to just pop in your mouth and go. I highly recommend bringing these to a bbq or pool party this summer!

Recipe

For the crust:

1/4 cup sugar

1/2 cup butter, room temperature

1 1/2 cups all purpose flour

1/8 tsp salt

Topping:

1 cup fresh lemon juice

2 tsp lemon zest

3/4 cup pureed strawberries

1 1/4 cup sugar

4 large eggs

1/4 cup all purpose flour

1/2 tsp baking powder

1/4 tsp salt

Preheat the oven to 350 F. Lightly grease a 9×13 baking pan and make the crust first.

Cream together the sugar and butter in a mixer and then on low speed, add in flour and salt until the mixture is crumbly. Pour into baking pan and press down with your fingers until you make an even layer.

Bake for 16 minutes.

While the crust is baking, go ahead and make the topping. In a food processor, combine lemon juice, lemon zest, strawberry puree, sugar and eggs and process until smooth.

 

Add in the flour, baking powder, and salt, then pulse until all combined.

Pour the whole topping over top of the hot crust after its done baking.

Return the whole thing to the oven for 25-30 minutes, until the whole thing is set and not jiggly.

Let cool and slice into bars.

Store in refrigerator.
