Call me crazy, but I always keep a bag of potatoes in my pantry. I can’t tell you how many nights I’ve been so glad that I do. When I’m in a time-crunch and realize I totally forgot to plan a side dish for dinner, having that backup bag and this oven-roasted potatoes recipe is a total life-saver. 

This is a potato side dish that couldn’t be easier to throw together. Just chop up the taters, toss them in oil and seasoning, and bake. These are always a huge hit. The blend of seasonings and perfect crispy texture is so delicious.

Ingredients

  • Baby potatoes
  • Extra virgin olive oil
  • Garlic powder
  • Dried thyme
  • Ground paprika
  • Salt

Variations / Options / Add-ins

  • Potatoes: To get the best results, I’d recommend using yellow or red potatoes in this recipe. But any type of potato would work.
  • Seasonings and herbs: You can adjust all of the seasonings to your particular taste.
  • Sour cream/dipping sauce: I love to put a dollop of sour cream on the side of these to dip them in. Another favorite in our house is sour cream and onion dip.
  • Cheese and bacon: To take these up a notch, try sprinkling bacon bits and cheese to melt over the tops of your potatoes. Mozzarella, cheddar, or parmesan cheeses would all be super delicious!

How to Make Oven Roasted Potatoes

The instructions for these delicious potatoes could not be easier or more straightforward. Best of all, they turn out perfect every time!

  1. Cut baby potatoes into halves and place in a large bowl.
    Pro-Tip: If your potatoes are small in size, simply cut them in half, but if you have larger potatoes it wouldn’t hurt to cut them into quarters to ensure they bake all the way through.
  2. Pour olive oil over potatoes and toss to coat. 
  3. Sprinkle all spices over potatoes and toss well to evenly coat.
    Pro-Tip: To ensure that you have flavor throughout all of the potatoes, be sure to coat your potatoes really well in olive oil. Then, when you put the seasoning mix on them, be sure to coat them all evenly again!

  4. Line a baking sheet with aluminum foil. Lay potatoes in a single layer on a baking sheet.

  5. Bake for 25 minutes.

How to Store Leftovers

Store leftovers in a sealed food storage container in the fridge for 3-4 days. To reheat, you can toss them in a pan with a bit of olive oil on the stovetop, I find this keeps them crispier. You can also pop them in the microwave. I love to serve these as breakfast potatoes the day after making them for dinner!

  • 3 pounds baby potatoes (yellow or red)
  • 3 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp ground paprika
  • ½ tsp salt
  • ½ tsp cracked black pepper
  • 1 tbsp fresh minced parsley
  • 1 tbsp fresh minced basil

Instructions
 

  • Preheat the oven to 425F.
  • Cut baby potatoes into halves. Place in a large bowl.
  • Pour olive oil over potatoes and toss well to coat.
  • Sprinkle all spices over potatoes and toss well to evenly coat.
  • Line a baking sheet with aluminum foil. Lay potatoes in a single layer on a baking sheet.
