What I’ve Learned About No Bake Truffles

After making more batches of these than I can count, the difference between a smooth dipped truffle and a frustrating one comes down to temperature and patience.

  • Chill or freeze the centers before you dip. A cold firm ball holds its shape in the melted chocolate. A soft warm one falls apart on the fork and clouds the coating.
  • Thin the coating with a little oil if it drags. If the melted chocolate is too thick to coat smoothly, a small spoon of coconut oil loosens it and gives you that clean shell.
  • Use two forks to dip and let the excess drip off. Lift, tap, and slide the truffle back onto parchment. That is how you avoid a thick puddle at the base.
