I started making these chocolate cheesecake stuffed strawberries when I needed a dessert that felt special but did not require turning on the oven or committing to a full cheesecake. They are one of those easy desserts I pull out when I want something that looks impressive but comes together fast using simple ingredients I already have on hand. Fresh strawberries filled with creamy chocolate cheesecake hit that sweet spot between elegant and effortless, which is pretty much my favorite kind of recipe.

There is something so fun about scooping out each berry and swirling in the fluffy chocolate filling. I always end up sneaking a taste of the mixture before it even makes it into the piping bag because it’s just that tempting. And once the berries are filled and topped with a few chocolate chips, they look like fancy little desserts even though they take almost no effort.

Ingredients Notes

  • Strawberries: Fresh, firm berries work best so they hold the filling. Jumbo strawberries make the most impressive servings.
  • Cream cheese: Soften at room temperature for the smoothest texture.
  • Chocolate syrup: Thicker syrups create a firmer filling. You can swap in caramel or strawberry syrup for a fun flavor twist.
  • Powdered sugar
  • Unsweetened cocoa powder
  • Vanilla extract
  • Whipped topping: Homemade whipped cream works too.
  • Optional garnishes: Mini chocolate chips, sprinkles, or a drizzle of syrup add extra texture and flair.

See the recipe card for full information on ingredients and quantities.

Recipe Variations

  • Use flavored cream cheese: Try chocolate or mixed berry for an easy flavor boost.
  • Add crunch: Finish with crushed Oreos or graham crackers on top.
  • Dip the strawberries: Coat the bottoms in melted chocolate before filling for a chocolate-covered twist.
  • Extra chocolate: Stir mini chocolate chips into the filling before piping.
  • Try the classic version: Skip the cocoa and chocolate syrup for simple, creamy no bake Cheesecake Stuffed Strawberries.

How to Make Chocolate Cheesecake Stuffed Strawberries

  1. Prepare the strawberries: Wash, dry, remove the stems, and hollow out the centers. Trim a tiny slice off the bottom of each strawberry so they stand upright.
  2. Mix the cheesecake filling: Using a mixer on medium high speed, beat the cream cheese, chocolate syrup, powdered sugar, cocoa powder, and vanilla until smooth.
  3. Add whipped topping: Mix until the filling becomes light and fluffy.

  6. Chill or serve: Serve right away or refrigerate until ready to enjoy.

Recipe Tips

  • Let the cream cheese soften naturally so the filling stays thick and smooth.
  • Trim a small slice off the bottom of the strawberries so they stand upright.
  • Make sure the berries are fully dry before filling.
  • Chill the strawberries in the fridge for 10 to 15 minutes for the neatest presentation.
  • If the mixture softens, refrigerate it briefly, then pipe with a star tip for a pretty finish.
  • Use a pastry bag with a star tip to create a pretty swirl on top of each strawberry.

Frequently Asked Questions

Can I make these without a piping bag?

Yes. Spoon the filling into a resealable plastic bag and snip off a small corner, or simply spoon the mixture directly into the strawberries for a more rustic look.

How do I make the filling thicker?

Beat in a little extra powdered sugar or refrigerate the mixture for 10 to 15 minutes before piping.

How do I keep the strawberries from getting soggy?

Pat them completely dry after washing. Any extra moisture can make the filling slip or cause the berries to soften, and a quick paper towel pat down helps keep everything neat.

Why does my filling look lumpy?

This usually means the cream cheese was not soft enough. Let it sit at room temperature for about 30 minutes before mixing. Smooth cream cheese equals smooth filling.

How can I stop my strawberries from tipping over?

Cutting a thin slice off the bottom helps them stand up. If they are still wobbly, that just means snack while you cook.

Can I make these without cocoa powder?

Yes. If you skip the cocoa powder, you will have more of a chocolate cheesecake vibe from the syrup alone. The flavor will be a little lighter but still very good.

Make Ahead & Storage Instructions

  • Store: Place the stuffed strawberries in a container tall enough to protect the tops from getting squished. They’re best enjoyed the same day but can be kept in the refrigerator for up to 24 hours.
  • Reheat: Not applicable for this no bake recipe.
  • Freeze: Wrap each stuffed strawberry individually and freeze for a few weeks for a fun frozen treat.
  • Make ahead: Prepare the filling up to one day in advance and refrigerate. Whip the mixture again before piping. Assemble the strawberries on the day you plan to serve them.

Jenn’s Notes

To store, place your strawberries in a container with enough height so that the frosting doesn’t reach the top.
They are best on the same day, but will still be good for another day or so. You can also freeze these by individually wrapping them in foil or plastic wrap for a few weeks for a yummy frozen treat.
