Hi everyone! Amanda here from Old House to New Home, sharing a delicious recipe that can be thrown together in minutes on the grill. This Grilled BBQ Chicken Flatbread Recipe has juicy grilled chicken, two types of cheeses, caramelized onions, and my favorite green, arugula!! The whole thing gets drizzled with ranch dressing! So good!

Are you fans of the grill? Once May rolls around, we try to grill as much as possible. I have been known to throw just about anything on there and hope for the best! Pizza, potatoes, veggies, bread, anything!!

The grill is for so much more than just meat (but if you are looking for a great steak marinade, I have the best one ever!) However, did you know that pizza is seriously the best on the grill and this BBQ Chicken flatbread is reminiscent of a BBQ Chicken pizza, but I swapped out the pizza dough for a naan flatbread.

You can find those in most grocery stores these days and they are so good! They are the perfect receptacle for holding all this cheesy bbq goodness!

How to Make Pizza on the Grill

The toppings on this flatbread are really the star of the show here. You have bbq sauce, gouda and cheddar cheeses, and caramelized onions.

All of those foods have so  much flavor and make these way better than your average bbq chicken pizza. And we have to talk about the arugula.

Please don’t skip the arugula! It is by far one of my favorite foods and if you haven’t tried it, you must. It is so sharp and spicy and tastes like lettuce doused in pepper. I don’t know if that is the best description but I tried! It is so much better than a regular green and adds texture and flavor to the flatbreads.

The longest part of the process here is caramelizing the onions. I threw these in the pan while my husband grilled the chicken and the timing worked out perfectly!

Once the chicken is grilled and the onions caramelized, everything gets assembled and sent to the grill so the cheese can melt. Gooey melted cheese is always delicious!

Grilled BBQ Chicken Flatbreads

Grilled BBQ Chicken Flatbread

This Grilled BBQ Chicken Flatbread Recipe is so easy and flavor packed! Your family will love this easy grilled dinner recipe!

Ingredients
  

  • 2 chicken breasts
  • 2 naan flatbreads
  • ½ cup gouda cheese
  • ¼ cup cheddar cheese
  • 4 tbsp bbq sauce
  • 2 tbsp ranch dressing
  • ½ cup arugula
  • 1 red onion sliced thin
  • 1 tbsp butter
  • salt and pepper to taste
  • ½ cup red shredded cabbage

Instructions
 

  • Preheat grill to medium high heat. Sprinkle chicken breasts with salt and pepper and grill 4-5 minutes per side, or until cooked through. Remove from grill and set aside. Slice into strips after it rests for a few minutes.
    While chicken cooks, melt the butter in a sauce pan and add the onions. Cook until caramelized, about 10-15 minutes. Stir frequently.
  • Once onions and chicken are done, assemble the flatbreads. Spread the bbq sauce first, top with chicken slices, and then the cheese. 
    Put on the grill and grill until cheese is melted, about 5 minutes. 
  • Once grilled, remove from the grill and top with the arugula and red cabbage. Drizzle with ranch dressing. Cut into strips and serve immediately.
