Watergate Salad is a no-bake dessert salad made with pistachio pudding, crushed pineapple, whipped topping, and mini marshmallows. Ready in 10 minutes and gets better the longer it chills.

Instructions
In a large bowl, mix the crushed pineapple and pudding mix until the pudding mix has completely dissolved and the pineapple pudding mixture is thick.
2 boxes (3.4 ounce boxes) pistachio pudding mix, 20 ounces can of crushed pineapple in juice
Stir in the pecans and mini marshmallows, and optional 1 cup shredded coconut.
½ cup chopped pecans, 1½ cups white mini marshmallows, 1 cup shredded coconut
Fold in the whipped topping.
12 ounces whipped topping
Transfer the Watergate Salad to a serving bowl and top with chopped pecans and cherries.

Refrigerate for one hour or until ready to serve.

Storage:
Store your Watergate salad in an airtight container in the refrigerator for 3-5 days. The airtight container will help prevent the whipped cream from browning and the other ingredients from absorbing fridge odors.
