Sweet Hawaiian Crockpot Chicken is filled with sweet and tangy tastes of the tropics. An easy set it and forget it dinner that cooks itself in the crock pot!
2poundsboneless skinless chicken breastcut into 1 inch pieces
¾cup100% pineapple juicefrom 6 oz. mini can
½cupbrown sugarpacked
¼cupsoy sauce
3tablespoonshoisin sauce
1teaspoonminced garlic
2tablespoonscornstarch
Garnish
1-2tablespoonsthinly sliced green onions
Instructions
Place the boneless skinless chicken breast pieces into the insert of a 4 - 4 ½ quart crockpot slow cooker.
In a small mixing bowl whisk together the pineapple juice, brown sugar, soy sauce, hoisin sauce and minced garlic.
Reserve ¼ cup of the sauce, then pour the remaining sauce over the chicken and gently stir to coat all the chicken pieces with the sauce.
Place the lid onto the crockpot and set to LOW for 4 hours. After the chicken has cooked for 4 hours, remove the lid.
Add the cornstarch to the ¼ cup reserved sauce and whisk until no lumps of cornstarch remain. Pour the mixture into the crockpot and stir to combine.
With the crockpot on high, and the lid removed, cook the sweet hawaiian crockpot chicken for an additional 30 - 45 minutes or until the sauce has thickened. Garnish with the thinly sliced green onions.

Cook time: 4 hours LOW and 30-45 minutes HIGH to thicken sauceStorage:
To Store: Completely cooled leftovers, can be stored in an airtight container, in the refrigerator, for up to 3 days.
To Freeze: Once cooled completely, you can freeze the sweet hawaiian crockpot chicken, in an airtight container or freezer bag, for up to 2 months.
To Reheat: You can reheat leftovers in the microwave or on the stove top until warmed through.
Tips:
While your sauce is thickening, you can cook some white rice (Jasmine or Basmati) to serve with this sweet hawaiian crockpot chicken.
I love keeping the little 6 ounce mini cans of 100% pineapple juice stocked in my pantry. They are great for having on hand for quick sauces like this, marinades, smoothies or tropical cocktails.
Don’t skip the cornstarch slurry. It will thicken the sauce so that it can coat the chicken.
If you have a large 6 quart crockpot slow cooker, you can easily double this recipe. You would still cook for 4 hours on LOW.
For easy clean-up, line your crockpot with a plastic liner before adding the food. Simply throw away the liner once your meal is served.
