Crockpot Coca-Cola Pulled Pork is a simple set-it and-forget-it method to make fall apart tender meat that easily shreds with 2 forks. Delicious stuffed in sandwiches or served with sides.
Load the crock pot. Place the pork in the crock pot and rub the seasoning mix over the meat. Pour enough coke into the crockpot so that it almost covers the meat. Pro tip: Pour the soda down the side of the crockpot so as to avoid rinsing the seasoning off of the meat.
3-4 pounds pork shoulder or butt, 2 liters coke
Cook. Cook on low for 8-10 hours or on high for 5-6 hours.
Shred. Remove all but 1/4 cup of liquid from the crockpot and shred the pork. Shred it with 2 forks (or a meat puller) in the basin of the crockpot along with the remaining juices. You can remove the meat from the crockpot to pour the juice out and then put the meat back in to shred it!
Finish it off. Stir in the BBQ sauce.
1½ cups hickory BBQ sauce
Serve. Serve on buns or alone.
Notes
Storage:
To Store: Allow the pork to cool to room temperature before sealing it in an airtight container. It will stay good in the fridge for up to 4 days.
To Freeze: Store the pork in a freezer safe container in the freezer for up to 3 months. Thaw before reheating.
To Reheat: Reheat in the oven or microwave.
Tips:
This delicious shredded pork dish is best enjoyed warm.
I suggest you use a 6-8 quart crockpot to ensure the pork cooks properly per the recipe’s instructions. If you use a smaller machine, scale the recipe down. If you use a larger crockpot, scale the recipe up.
Any brand of BBQ sauce will work for this recipe. Pick your favorite or use a homemade sauce. I personally find the hickory adds a really nice flavor paired with coke.
I love using crockpot liners --they make cleanup so much easier.
